Pork Chops with Pineapple Salsa

Hey everybody, this is Dave from Cook and Share! It's a beautiful sunny day so I'm going to fire up the grill and make up some pork chops. To make this super special, I'm going to make up a pineapple salsa. I know you're going to love this, so let's get started.

So we're going to get started here by making the pineapple salsa. To do this, I'm going to add the pineapple bits to a sauce pan. This is about a 20 oz can and of course I'm not going to remove the juices because it adds additional flavor. A quarter of a cup of finely chopped red bell peppers followed by two finely chopped jalapeno peppers just to give it a bit of kick if you're not a jalapeno fan, well you can simply leave these out. A quarter of a teaspoon of cumin and half a teaspoon of salt so now what we're going to do here is turn our heat on to medium and we're going to stir and cook this for about four or five minutes just until it's heated through. After four or five minutes the pineapple salsa is nicely heated through and the flavors have come together well. So we're just going to turn off the heat and set this aside.

Okay now it's time to make the rub and to do this I'm going to add 1 tbsp of olive oil to a mixing bowl followed by half a teaspoon of lemon juice another one-half teaspoon of thyme some ground black pepper, I'm going to let you be the judge of this but I like ground black pepper so I'm going to add quite a bit. A clove of crushed garlic and I'm just going to give this a stir here just to get all those nice spices combined what I've got here are four loin chops and they're cut about an inch thick and these are at room temperature so what I'm going to do is take my brush and give each chop a nice generous application on the top side and of course flip them over and do the same thing for the other side. I've got my charcoal grilled nice and hot here now you can use a gas grill or a grilling pan for that matter, so what I'm going to do is place the chops on and we're going to leave them until they get an internal temperature of about 160° and this should take depending on your grill maybe 5 minutes or so on each side.

Our chops are done nicely so I'm going to give this a taste test. These are so good, the rub and the chops combined with the pineapple salsa is an explosion of flavors.
