Making a Pillsbury Cookie Ice Cream Cake: A Quick and Easy Holiday Dessert
We're gonna make a Pillsbury cookie ice cream cake, and it's going to be a real showstopper for your holiday gatherings. The dish starts with just taking our Pillsbury cookies, and we're using peanut butter and chocolate chip here today. But you can use whatever kind of cookie you like - sugar cookies work great, gingerbread cookies are fantastic, once you've rolled out the cookies they're going to go into a 350 degree oven and we bake them for eight minutes.
We like to roll our Pillsbury dough cookies into balls first because it gives us a more uniform cookie. We're using peanut butter and chocolate chip today, but whatever kind of cookie you'd like, sugar cookies work great, gingerbread cookies are great once you've rolled out the cookies they're going to go into a 350 degree oven and we bake them for eight minutes.
We keep our cookies on the chewier side because when you stack them into a dish and put ice cream on top of them and freeze them, we want them to be chewier, more pliable than crispy. And harder cookies need to cool so they don't get all soggy and gross when we're done with this recipe. So, we leave our cookies on the range while we get started on our first layer of ice cream cookie cake.
We put our cookies in a freezer-proof dish and add a layer of whatever ice cream you like today - I'm choosing eggnog vanilla and chocolate, but feel free to use your favorite flavors. We're using about two cups of ice cream per layer once we get it in the dish, smooth out a little bit this is where you have to move a little bit quickly so the ice cream doesn't completely melt.
Now that our cookies have cooled, we're going to put this down on the first layer of ice cream. I'm choosing chocolate chip today to mash them down into the dish - we do two rows and then one cookie kind of broken up to fill up some of the pieces that aren't filled with cookie, then we go on to the next layer of ice cream.
We're going to do vanilla for this layer, and then the second layer of cookie. We have peanut butter today, just repeat this process and once our baking dish is completely full pop it back in the freezer until you're ready to serve. And that's about 30 minutes in the freezer - the ice cream cookie cake will be set up, cut ourselves a nice piece here and there.
As we look at our finished Pillsbury cookie ice cream cake, I have to say, it's a real showstopper for any holiday gathering. And the best part is, it's super easy to make - just follow these steps and you'll have a delicious dessert that your guests will love.
