The Lucky Green Baked Eggs: A New Year's Tradition

For Jeff, the color green is a lucky one, especially when it comes to the new year. According to him, "Lucky green is a lucky color because for the new year it symbolizes wealth." He loves to incorporate this color into his cooking, and today he's making a delicious dish that's sure to bring good fortune.

Jeff starts by heating up some olive oil in a mini Dutch oven. He adds chopped shallots and lets them wilt for a few minutes. Next, he sautés the shallots with some kale, salt, and pepper until they're soft and fragrant. This is just the beginning of his lucky green baked eggs.

To add more flavor to the dish, Jeff pulls out some canned ingredients - "some garlic not really magic chopped green olives more green more green Cas" - and adds them to the pot. something that looks like uh this okay so it's just change just just sort of change color it's got a little darker but it's just so good you could eat this as a side I just taste it it's so good so good with like a piece of fish we're going to make a little Wells let's say we have four little wells and in this well for decoration decor and a little more flavor we're just going to drop a Basil Leaf or more green more money you know a lot of cultures folded leafy greens means like folded money I've just broken uh four eggs uh in little jars and usually I do this if they if you break you can throw them away sa for scrambled eggs with just so you want to really get a nice just a little insurance policy there you go and you just drop them in the little Wells see how easy that is MHM oh do that look good it does a little bit of salt and pepper you don't want to overcook these eggs one thing you just they have to be a little runny because it's going to help with room temp my eggs when I
