**Quick and Delicious Midweek Meals: Ground Beef and Broccoli Stir Fry**
When it comes to meal prep, sometimes we need something quick and easy to whip up for lunch or dinner. In this article, we'll explore two simple midweek meals that can be prepared in under 25 minutes. The first dish is a ground beef and broccoli stir fry, which is incredibly delicious and packed with nutrients.
**The Sauce**
To start making the ground beef and broccoli stir fry, we need to prepare the sauce. In a small bowl, combine 1/3 cup of beef broth, 3 tablespoons of soy sauce, 2 tablespoons of honey, a few drops of sesame oil, and a teaspoon or two of ground black pepper. Whisk everything together until smooth, then set it aside for a few minutes.
**Blanching the Broccoli**
While the sauce is being prepared, we can start blanching some broccoli florets. Fill a pot with boiling water and add 2-3 cups of broccoli florets. Blanch the broccoli for 3 minutes, or until it's tender but still crisp. Remove the broccoli from the water with a slotted spoon and set it aside in a bowl.
**Cooking the Ground Beef**
In a preheated pan over medium-high heat, add 1 tablespoon of oil and cook 1 pound of ground beef, breaking it up into small pieces as it cooks. Once the beef is browned and cooked through, about 5 minutes, add a small chopped onion (3-4 cloves) and 2-3 cloves of minced garlic to the pan. Cook for an additional 2-3 minutes, until the onion is translucent.
**Combining the Sauce and Ground Beef**
Add the prepared sauce to the pan with the ground beef and stir everything together. Make sure there are no lumps in the sauce by whisking it constantly. Then, add the blanched broccoli florets to the pan and toss everything together until the broccoli is evenly coated with the sauce.
**Serving and Garnishing**
Reduce the heat to medium-low and let the stir fry simmer for 4-5 minutes, allowing all the flavors to meld together. Serve the ground beef and broccoli stir fry over hot rice or noodles of your choice. To garnish, sprinkle some sesame seeds on top (white and black work well). Take a bite... Wow! This dish is not only quick and easy but also incredibly delicious.

**Tips and Variations**

* Use leaner ground beef if you prefer a healthier option.
* Substitute chicken breast or thighs for the ground beef for a different protein option.
* Serve the stir-fry over rice noodles or udon noodles for a more flavorful and textured dish.
