The Art of Traditional Mexican Lasagna: A Cowboy's Recipe

As we sit down to enjoy this delicious dish, it's hard not to think about the humble beginnings of this recipe. The cowboy who created this masterpiece must have had a lot of patience and love for his craft, as the result is nothing short of amazing. This traditional Mexican lasagna has all the flavors and ingredients that you would expect from a classic dish, but with a few twists that make it truly unique.

To begin, we need to prep our ingredients. Whether you're going camping or just want to have a hearty meal at home, this recipe is perfect for getting everything ready ahead of time. Just think about how much easier it will be when all these ingredients are sorted and ready to go. And don't forget that important tip about checking the bottom of your can of enchilada sauce - Grandma always taught me to hit the bottom of it, as it's a trick that'll keep you from breaking the seal.

Now, let's talk about the Hatch Chili from the Fresh chili company. This is where things get really interesting. We're going to sprinkle this around like we're giving it a little blanket of love, and then we'll start smearing it out to get our flavors on the same playing field. I mean, can you just imagine eating this right now? It's like a symphony of flavors in your mouth.

But wait, there's more! We're going to add another layer to this dish, because why settle for just one delicious thing when we can have multiple layers of goodness? And then it's time to cook it all up. We'll place our Dutch oven on the grill, with hot coals at the bottom and only a few at the top. This is where the magic happens - we're going to let this dish slow-cook until everything is perfectly cooked through.

Now, if you're cooking in the comfort of your own home, be sure to preheat that oven to 350 degrees Fahrenheit. It'll take about 30 minutes for it to cook, but trust me, it's worth the wait. We'll rotate the Dutch oven lid every now and then to make sure everything is even and there aren't any hot spots that might ruin the dish.

As we near the end of our cooking time, you can smell the aroma wafting from the pot - it's like a warm hug on a cold day. And when it's finally done, we'll know by the way the tortillas are soft and the cheese is melted to perfection. It's like a little slice of heaven right here on earth.

But before we dig in, let me tell you about the leftover tortillas for our furry friends at home. Yep, that's right - this dish is so good that even our puppies deserve a taste! And speaking of leftovers, I hope you enjoyed today's video as much as I did making it. The flavors are truly out of this world.

As we savor each bite of this delicious Mexican lasagna, let's take a moment to appreciate the people and experiences that bring us together. Whether you're from Italian or Mexican descent, this dish is a beautiful representation of how different cultures can come together to create something truly special. And as cowboys, we know all about bringing people together - after all, it's in our blood.

In conclusion, I want to leave you with a little reminder that making someone's life better today is what it's all about. So, let's make sure to be good neighbors and friends to one another. That's the cowboy way.

"WEBVTTKind: captionsLanguage: enone man one fire one pot Mexican lasagna yeah it has been a staple on ranches for me for many years in fact it is in our first cookbook you don't have the first cookbook hey we wrote this cookbook back in 2015 and I guarantee you that somewhere in here like this page right here and I know that cowboy right there that's so Bud look at there Mexican tortilla lasagna so when you're talking about lasagna you got Ricotta and then it's got these big flat noodles that goes on there but why would you want to use a big old flat noodle when you could use some homemade tortillas in there we're going to make it layered we're going to make it cheesy and we going to make it a little bit spicy well I brought a 12in dutch oven over here put it on a trivet put some coals directly under and around the outside because not only is this one of my favorite dishes but it's nearly a one pot meal it is cuz we're going to fix it right here first thing we're going to do 2 lbs of 802 ground chuck you can notice too like when we're stirring something if we're cooking with a casserole or something like that we're always using a wooden spatula never a spoon sure I'll serve with a metal spoon but I'm never going to turn flip scrape something like that to clean unless it's wood or unless it's plastic and I prefer wood cuz plastic will burn when it gets hot last thing I remember anyway one of my favorite fruits in the whole world some jalapeno one yellow onion so we get all that mixed in there now you know when you're making traditional lasagna you'd be add stuff like basil and stuff like that to it and oregano but no no no no no no the green part of this today is the jalapeno but there's also another secret that I'm going to throw in there right at the last so don't leave me now thinking this is just some kind of ordinary lasagna so let's go ahead and give it a little seasoning we're going to start with just a little bit of original here then we're going to add some taco seasoning now which way is the wind blowing there it goes right in my eyeball let's get all that stirred up get it to Brown we're getting closer and closer well meat is about browned up it is but I always like to at this point is go back and get me a little taste we're going to add just a little more taco seasoning and a little bit of beef broth just to get all that cuz I want a little liquid in there when we put this together so we going to go about that much no hey hey hey hey hey hey not yet big not yet buddy I seen you over eyeballing the refried beans let me see if I can set this off right here now you see me put this Stargazer up there and you look in there and what is it refried beans from scratch yeah now if you're in a hurry I'm not going to get on to you too bad for going down there to the store and getting you a can of refried beans be but these are so easy to make we have a video on reffed beans and they are one of my favorite you can also use canned beans in this recipe just go ahead and drain the liquid off of them you're going to add mayonnaise you're going to add sour cream you're going to add butter and some good spices to it and it'll come out just nearly as close as what we made homemade you know I'd made these refried beans this morning earlier so we're just going to warm them back up so the cooking process is really a little quicker when you get it all back together everybody is is here and I want y'all to look you can always tell a homemade tortilla by see this is not really round is it Shen and if y'all are looking for a good homemade tortilla make sure and check that video out it's shans do we have it also in the cookbook I think it is in the cookbook I think it is in faith family and the feast maybe oh is it okay but uh it is they are the best and you know what makes them the best Shen bacon grease uhhuh bacon grease took the meat out of this 12-in Dutch hug got the beans warmed through we did now we're going to do the layering process and on the bottom goes tortillas now you may have to cut them tear them whatever you got to do to make the puzzle fit really well next comes a layer of refried beans and just smear them on there just like ice in a cake we're going to use about half of them and if you're looking and you think well I'm want to just do this with canned beans it'll take you about three of them regular cans I think it's a are 15.5 Oz but that'll about come out to what you need if you're going to make this get you some sour cream spread it around there too this dish turns out really well it cuts well when it's done and the flavors and cowboys asked for this many times on a ranch and we cooking it and we usually did it at a noon meal usually the second or third day we ever on a ranch it is a cowboy favorite cowboy approved time for half the meat it is try to get some of that beef broth in there with it cuz we sort of need that extra sauce in there we do I was going to use some enchilada sauce out of the can and some rotail that had been drained but folks we changing this up a little and you'll look right here what's that say Hatch Green Chili I told you we was going to spice it up a little so we just going to sprinkle a few of these right in here to go with them jalapenos then next we going to put the cheese to it just layer it on there really oil and this is a great recipe to do if you're new to a dutch oven or you're going to go camping you can prep all these ingredients sort of forehand take them with you and you're in pretty good shape now would be the time when we add the enchilada sauce oh my gosh childproof label that was a trick grandma always taught me hit the bottom of it I didn't know that you'll break that seal pretty quick be in pretty good shape Hatch Chili from the Fresh chili company fresh red chili we just going to give it a little sprinkling around cuz we're going to smear that out to get it a Level Playing Field for everybody I I I could just go ahead and eat this right now I think one more layer to go and then we go and cook it oh well we got it all put together put it over here on a trivet heavy coals on the bottom but very light on the top you've seen how that was pretty close to the top of that lid so we're going to cook that as slow and light as possible and really this meat and everything is cooked through we just got to get all them flavors to blend up through there get that cheese all melted and good and gooey and them tortilla softened now if you're doing this in the house preheat that oven to 350° probably going to take you about 30 minutes to cook it in the house now we will rotate that Dutch oven lid One Way oven the other even out some hot spots if we got any when you begin to see all that bubble up through them tortillas and then tortillas get soft you'll know that's done and we'll probably end up Browning that cheese really well right at the last M cheesy cheesy layered goodness it is now you see me right over to make sure that I knew this was cooking through and nearly done as I took that fork and poked me some holes them tortillas was soft seeing all that juice bubbling around there but then added a few more coals to top of that Dutch oven to Brown that cheese up even a little more now I want to warn you cuz I have seen Cowboys do this and me as well do not eat it right out of the pot that cheese will stick to the roof of your mouth I mean you won't never get it off but while that's cooling just a minute remember this recipe come out of tasty Cowboy but let see what's come out of it today leftover tortillas for the puppies so but you have to I don't know if we have everybody cuz it's it's like 80° in February the good Lord said hey we going to give youall a little dose of early Springtime so here's one for the Mage here's one for the beig we'll save the rest of these now everybody else was sleeping yeah they're in a shaded up somewhere I'm going to have me a bite haven't had this in a long time go M yes I'm going to tell you right now the flavors that come out of that Shin are better than any traditional lasagna that you could ever eat in your life so the big question is Italian versus Mexican oh I'm going to go with Mexican all the way really I mean we made a great lasagna y'all can go back and watch that video it's got a traditional marinara sauce to it but this the sour cream and refried beans may be the star of the show here with them green chilies and mixed in there well I hope y'all enjoyed this video cuz I sure did it brought back a lot of classic memory for me from cooking on ranches many years ago when I started in 1992 and that's been on the menu nearly every Ranch ever been in my life we thank y'all so much for tuning into our videos hey y'all remember to check out that events page too cuz things is coming up pretty quick they are over here at the rich theater me and the cleverly we going to be doing it to it and then it won't be long after that we'll be in kidan Ohio up there at Layman's and if you ain't got a ticket for that you better get one cuz it sells out really quick it does hey it is with great pride honor and privilege that I tip my hat to all the servicemen and women and all the veterans that have kept that old flag of flying up there over Camp y'all come on in here and get really close now cuz I got something on tell you what can we all do to make someone's life better today that is our goal let's make everybody a better neighbor let's make everybody a better friend and all it starts with is me and you God bless you each and everyone and I'll see you down the Mexican lasagna tre good job Mage play for the Yankees no how about you Mage Mage is two for two back in 100 he is Mage just Lu good
