Creating Chicken and Waffles on a Kettle: A Delightful Recipe by BBQ Pit Boys
When it comes to cooking chicken and waffles, many people think that it's a traditional dish that can only be made with certain appliances. However, as demonstrated by Jose of Q Chapter in the video, one can actually create this delightful recipe using a kettle. In this article, we'll delve into the world of kettle-cooked fried chicken and Belgian-style waffles.
To start, the process begins with taking the backbone out of just chicken. The next step is to remove the thighs and cut them off from the wings. Jose recommends cutting these pieces in half around the bone to make them easier to handle. The next step involves preparing a dry marinade by mixing poultry powder, garlic, black pepper, and cumin. This mixture is then applied to both sides of the chicken pieces, ensuring they are evenly coated.
After applying the marinade, Jose recommends allowing the chicken to sit for a bit before brining it. He uses buttermilk as the brine, adding a little extra poultry powder to enhance the flavor. Once the brining process is complete, the mixture is then coated in a seasoned flour made from the same poultry powder and other spices. This ensures that the chicken pieces are well-seasoned and ready for cooking.
To cook the chicken, Jose heats up his kettle to about 400°F (200°C). The kettle-cooked fried chicken is cooked by adding a little canola oil and then placing the coated chicken pieces on top of it. The heat from the kettle helps to crisp the coating, giving the chicken its signature crunch. After cooking, the finished product is removed from the kettle and allowed to cool slightly.
Moving on to the waffles, Jose uses a unique ingredient called pearled sugar, which gives these Belgian-style waffles their distinctive flavor and texture. To make the waffles, Jose begins by mixing together milk, sugar, and yeast in a bowl. The mixture is then whisked until it becomes frothy, indicating that the yeast has started to activate. The next step involves adding melted butter, eggs, vanilla extract, and flour to the mixture. This creates a smooth batter that can be poured onto a hot surface.
Jose recommends letting the dough rest for at least 30 minutes to allow the yeast to fully activate and give the waffles their signature rise. Once the dough has rested, it's time to cook the waffles. Jose uses a kettle to heat up the surface, cooking the waffles until they're golden brown and crispy.
To assemble the chicken and waffles dish, Jose simply places the cooked chicken pieces on top of the waffle, drizzling with fresh maple syrup. The secret ingredient that takes this recipe to the next level is a shot or two of your favorite BBQ sauce. When combined with the sweet and savory flavors of the waffles and fried chicken, it creates a truly delightful dish.
In conclusion, creating chicken and waffles on a kettle is a unique and delicious way to enjoy this classic dish. With a few simple ingredients and some basic cooking skills, anyone can create this mouthwatering recipe at home.
