You might have.I first attempted a recipe oftanghulu about five years ago,and it is a Chinese confection.It's basically candied syrupwhere fruits oftentimesare dipped into it,and it forms a beautiful,crystal clear, crackly shell,and you bite it into it,get a punch of sweetnessand a nice shattering texture,and inside you get a nice juicy fruit.So the presentation is stunning.You often have a skewerof fruits, a long one.Sometimes it's strawberriesor crab apples or Mayport apples,and they're strung up,then dipped into a vat of molten syrup.It's allowed to cool,and when it cools, it has a beautiful,crystalline, clear shell.It looks like it's beendipped in epoxy or resin,and then you bite into itand it's like you've got a candy shellon the outside of the fruit.Absolutely beautiful.I tried it for the firsttime five years ago,it failed the first time.If you wanna see that video,I'll put the tanghulu video down below.But in my second attempt,I was successful.So I'm going to be usingthat same syrup recipethat I used in that video.But today I am going to bemaking a fried chicken version,more specifically KFC.The inspiration for thiswas a TikTok video I sawwhere someone used Popeye's.They candied Popeye's chicken.I don't have a Popeye'slocation relatively close to me,so I went with KFC, plus KFCwas what I grew up eatingwith my mom on Wednesday nightwhen my dad had to work late.So there is that kind ofnostalgic connection to it.But I'm gonna be taking a drumstickand I'm going to be to tanghuluing it.It sounds outlandish,but this sugary, sweet shellon the outside of acrispy chicken drumsticksounds kind of fantastic.You've got just super sweetand then savory together,and then you've got crunch.I just need to know whatthat experience is like.And if I have enough syrup,I also have some fresh strawberriesthat I picked up from my local farm,and I'm gonna do a strawberry versionbecause they are so delicious.So, so delicious andsuch a pleasure to eat.All right, with that, let'sgo ahead and get started.So when it comes to candy makingand specifically sugar candy making,a thermometer is pretty important.You can pick up a candythermometer like thisat most grocery stores,They're relativelyinexpensive. They're about $10.And it's really importantbecause we need to cook thisto a very specific temperature,300 degrees Fahrenheit,about 150 degrees C,and it tells you right here,we're gonna cook it tothe hard crack stage.Now, this is a candy thermometerbecause that is the indicationof the type of candy.We're gonna be doing hard cracks.So that's like a lollipop consistency.There's also soft crack,firm ball, hardball softball.The ball stages are more formaking toffees and caramels.So you wanna get it pretty hot.Basically, we're evaporatingthe water out of the sugar,and when that happens, sugar takes ona very interesting,different kinds of behaviors.It's fascinating, but thetemperature is really crucial.So the range for hard crackis about 300 to 310 degrees.Once it goes to 330, thesyrup will start to caramelizeand then we start getting caramel.So, very interestingsugar and very tricky,I've noticed in my experience.I made dragons beard candy,and that was an utter debacle.I finally did get it.But sugar is tricky, is whatI'm trying to share with you.So this is perfectly fine to use,but I'm gonna be usingthis thermometer instead.I quite like it because I can set itto the temperature thatI want, 300 degreesand it will tell me when it reaches that.So what I've alsolearned from making candyis that there is some residual heat.Even when you turn off theheat, the sugar remains hotand it often will continue to heat a bitabove the temperature.So it's really great whenyou can get it preciselyat the temperature you want.So, no heat to the pot yet.We're going to add our three ingredients.Sugar, lots of sugar,plain old white sugar,corn syrup, light corn syrup.This is a crucial ingredient.When I first made tanghulu the first time,I didn't use this and my syrup seized,and that was a problembecause we want this tobe a fluid concoctionso we can dip our things, right?Then we're going to add some water.I'll put a link down below to my websitewhere you can find all the measurements.So now we're gonna just mix this together.It's not gonna mix very wellbecause there's a lot of sugar in there,but once we start applyingheat, it'll start to melt.So we're gonna put thison a medium high heat.And in my experience,this went pretty quickly,about seven minutes,but I'll set my timer to giveyou an estimate of the time.So light that that medium high(timer beeps)and we're gonna start the countdownand see how long this takes.And we want this to get to 300 degrees,which is very hot.So whenever you areworking with sugar syrups,remember that it'smolten, it's so, so hot.So be very careful.Kids, do not do this by yourself.Alrighty, lovelies, I will come backwhen we get a little bitcloser. (exhales through lips)Right, my lovelies.We are getting close, we are at 292,and that took all of eight minutes,eight minutes and 20 seconds.So we're nearly there. 293.And while I was waiting for thisto come up to the boil here,I went ahead and tookmy KFC and skewered themso they would be alittle bit easier to dip.(thermometer beeping)300, kill the heat,and we are ready to dip.Eight minutes, 40 seconds.(thermometer beeping)I know, I hear you.Oh, I also have my strawberriesthat I've also-(thermometer beeping)Oh my gosh.So I've killed the heat, right?It's still going up.So it's at 310 degrees.(thermometer beeping)See, unplug that becausewe don't need that anymore.Set that aside.And we're gonna take our chickenand dip it into our syrup.Drain it.Look at that. That's gorgeous.And then set it on our pan to cool.Other drumstick.Dip, twist.Look at that, that's beautiful.And set.Okay, now we're gonna do thegood stuff. Strawberries.Look at that. So beautiful.I'm placing them on parchmentso that they don't stick.They create such abeautiful, glassy finish.Oh my gosh, so beautiful.Be careful, that syrupis so incredibly hot.Do not get it on your skin.Dip, twist and pull out.So the vendors that sell thesekeep the syrup at 300 degrees.So I think that's tricky,but it's important sothat it is still dippable.You know what I mean?Now, you can do any kind of fruit,as long as it doesn't have too muchlike exposed water or wetness,like any kind of sliced fruitwould be not recommended.Like watermelon. Something like a grape.I've seen tangerines, strawberries,something that has a dry exterior.And a tasty fruit is dippable,I believe, for tanghulu.Alrighty. So I am done dipping.I'm gonna let this cool offand then once it's cooledoff, we can taste it.It needs to cool off in order to hardenand get nice and crackly, so.Alrighty, lovelies,let's taste our tanghulu.It didn't take any time atall for these to harden up.Just let them cool for a couple of minutesand they're glassy hard.(strawberry clacking)Can you hear that against my teeth?Incredible. Mm-hm.But then you take anotherbite of the fried chicken,and then it kind of offsets it.So you've got the juicy chicken inside,you've got the batterand the coating of thefried chicken on the outsidethat gives you that fried chickeny flavorwith its 11 herbs and spices.And then you've got thisshell on the outsidethat is super crunchyand hard and very sweet.(shell crunches)(crunching) Mm-hm.(drawer rattles)It's a little too sweet forme, but it's not terrible.I mean, it's not terrible.Look at that glass on the outside.It's not glass, it's sugar,but it's not terrible.It's sweet and savory.
