30 Minute Cheesy Chicken Rice and Broccoli One Pan

One of My All-Time Favorite Recipes: 30 Minutes One Pan Chicken Broccoli and Rice

I'm excited to share one of my all-time favorite recipes with you, and it's surprisingly simple yet deliciously satisfying. This recipe takes about 30 minutes to prepare and cook, making it a great option for a quick weeknight dinner or lunch.

To start, heat some oil into a pan over medium-high heat. I use about a tablespoon of oil, but feel free to adjust the amount based on your preference. Once the oil is hot, add in about a pound of boneless skinless chicken breasts that have been cut up into smaller pieces. I like to use half a kilo of chicken for this recipe.

Next, season the chicken with some salt and ground black pepper. I also like to add a teaspoon of oregano and some other seasonings that I enjoy. Feel free to use your favorite seasoning blend or herbs – it's up to you! Simply stir the chicken into the pan and let it cook until it browns. Don't worry if the chicken isn't fully browned; it'll still be delicious.

Once the chicken is cooked, add in a half small onion that I've chopped up and two cloves of chopped garlic. Stir the mixture well to combine, and let it sauté for about a minute or so until the aroma of garlic fills the air. I love this part of the recipe – it's like a little mini-vacation from the cooking process!

Now it's time to add in a cup of long green rice. I like to use long grain rice because it holds its shape well and absorbs flavors nicely. Make sure the rice is washed, as we want it to be clean and fluffy. Give the mixture a stir around to combine everything.

Next up, we have two and a half cups of chicken stock. You can also use vegetable stock if you prefer – I just like the flavor of chicken stock better. Bring the mixture to a boil by stirring in the stock, then reduce the heat to a simmer and let it cook for about 12 minutes or so.

As the rice cooks, the aroma of the dish is starting to develop, and my friends and I know we're in for a treat! Once the cooking time has passed, pull the lid off the pan and add in some broccoli florets. Make sure to distribute them evenly throughout the mixture – we want every bite to be delicious. The recipe calls for just a couple of stalks of broccoli, but feel free to use more if you like.

Give everything a good stir to combine, then place the lid back on the pan and let it cook for another few minutes over low heat until the broccoli is tender. This is the hardest part of the recipe – waiting for the broccoli to be cooked through!

Finally, it's time to add in some cheese – specifically, half a cup of Tex-Mex mister mixture (I'll get into that below). Stir everything together until the cheese is nicely melted and distributed throughout the dish.

To finish off the recipe, I like to spread some more cheese over the top of the chicken rice. This adds an extra layer of flavor and creaminess to the dish – it's a game-changer!

stock too i just like the chicken stock and we'll just give this a stir around and bring it to a boil now we have a boil happening here i'm going to slip a lid on reduce the heat a little and let this simmer away for about 12 minutes or so after about 12 minutes this smells simply divine my friends i'm going to pull the lid off oh and i'm going to add in my broccoli florets just make sure we get a nice even distribution around here and this is just a couple of stalks of broccoli grab up a couple of spoons and we'll just toss this all together so that mr broccoli's nicely mixed in there hmm just look at this my friends doesn't this look incredibly gorgeous wow okay place the lid back on and we're gonna let this cook for another few minutes over low just until the broccoli becomes tender after about eight minutes i'm going to remove the lid and just look at this our broccoli is tender so i'm going to add in half a cup of cheese and this is just a tex-mex mister mixture give this a stir until that cheese is nicely in there okay i've turned off the heat here and i'm gonna spread some more cheese over the top i'd say about a cup and a half and i'm just gonna put the lid back on and let this melt down just for a couple of minutes or so after a couple of minutes guys there you have it voila our wonderful chicken rice and broccoli incredibly delicious oh my goodness just look at this and just look at this guys doesn't this look incredible wow okay let's give this a taste test this is heavenly wow broccoli is done to perfection a little bit just a tiny bit of a crunch on it chicken
