Making Dill Dust: The Essential Ingredient for Sweet Potato Tots

The first step in making sweet potato tots is to create a dill dust that will add freshness and flavor to our dish. To make this dust, we start by gathering a bunch of fresh dill, which we chop up a little bit in the food processor. We then add one quarter cup of kosher salt to the mixture. This may seem like a lot of salt, but trust us, it's necessary for drying out the dill and creating that nice salty bite.

We blend all the ingredients together until they form a smooth powder, which we call our dill dust. This process can be repeated with different herbs to create unique flavor combinations. Once we have our dill dust, we spread it out on a baking sheet lined with non-stick mat or parchment paper and pop it into the oven at 250 degrees for about 30 minutes, until it dries out completely.

While our dill dust is drying, we can move on to preparing the sweet potatoes. We start by peeling one sweet potato and placing it in boiling water for five minutes. This will slightly cook the potato while leaving the inside raw. After the potato has cooked, we take it out of the water and chop it up into small pieces before placing them in the food processor.

In the food processor, we blend the sweet potatoes with a tablespoon measure until they form a smooth, light texture. We then transfer the mixture to a bowl and add one third cup of all-purpose flour, which will help dry out the potatoes slightly and create a crispy crust when fried. We also add salt and pepper to flavor the tots.

With our potato mixture ready, we can now begin shaping it into our sweet potato tots. We use a tablespoon measure to portion out the mixture into uniform pieces, which will all fry up at the same time. The tots are sticky at this stage, but they hold together well and form into small logs when pressed between our hands.

Next, we heat two cups of safflower oil in a pan over medium-high heat until it reaches the perfect temperature for frying. We then carefully place our sweet potato tots into the hot oil, making sure not to overcrowd the pan. This is crucial, as crowding the pan can lower the temperature and prevent the tots from cooking evenly.

We fry the sweet potato tots for about four to five minutes on each side, until they are golden brown and crispy. Once cooked, we remove them from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. The tots are now ready to be seasoned with our freshly made dill dust.

Finally, we sprinkle some of our dill dust over the sweet potato tots, which adds an extra burst of freshness and flavor to our dish. These crunchy little morsels are not only delicious but also fun to eat, making them a great addition to any meal or snack. With our dill dust and perfectly cooked sweet potato tots, we have created a truly special dish that is sure to impress anyone who tries it.

and then you put it in the oven and let it dry out and then you sprinkle it over the freshly fried sweet potato tots so we're putting one bunch of dill that i kind of chopped up a little bit in the food processor and to it we're gonna add one quarter cup of kosher salt i know that sounds like a lot of salt but you need the salt to sort of dry out the dill and create that nice salty bite we're gonna just blend this all together there we go this smells good and you can do this with lots of different herbs too create like a nice herb dust okay so we're gonna do is we're gonna grab this dust and pour it all out and i lined my baking sheet with this non-stick mat but um you could definitely use parchment paper as well and we're also going to hold on to this put the blade back in i'm going to use this for the potatoes as well so what you want to do is just spread it out until you get a nice sort of even layer and we're going to pop it in the oven at 250 degrees for about 30 minutes until the dill dries out all right let's pop this in the oven so what i have here is one sweet potato i peeled it and what i did is i put it in boiling water for five minutes what you want to do is basically slightly slightly slightly cook the potato and leave the inside raw so that's what you get you get a little bit of cooked potato on the outside and the rest of the potato is raw so now what we're going to do is take the sweet potato cut it up and we're going to put it in the food processor and we're going to blend it all together there we go a really nice light texture so let's grab our bowl and we're gonna put the potato mixture into the bowl let's get it all in there i already have my oil heating so that it's nice and hot when i'm ready to add the potatoes one third cup of all-purpose flour and the reason you want to add the flour is because it's going to just dry up the potatoes a little bit so they're not too wet and you get a nice crispy crust when you fry it salt and pepper to flavor them and now we're just going to take the spatula and just kind of mix it all together you want all the potato to get coated with a little bit of flour so just keep pressing down i'm going to use a tablespoon measure just makes it easier to keep all of the tots the same size and uniform so they all fry up at the same time put it in my hand and press it together you can see it's a little sticky but it holds really well and kind of form like a two inch log i'm just gonna put it in the oil and i've got two cups of safflower oil you could use any oil you want that's flavorless fry them for about four to five minutes and you don't want to do too many at one time because if you crowd the pan it brings the temperature down and then they don't fry up beautifully let's take a look at my tots and see how they're doing first one is done look at that beautiful color put them right on the paper towel look how cute those are they're so much fun look at that grab a little bit of the dill dust sprinkle it right on top i cannot keep my fingers off of these guys so they're going to be hot crunchy a little more dill dust right on top they're crunchy and they're nice
