The Drummond House Breakfast Casserole Recipe: A Delicious and Versatile Option for On-the-Go Breakfasts
My daughter Paige is heading out early tomorrow to take her college tests, and I'm happy to help her fuel up with a delicious breakfast that's easy to grab-and-go. To make things easier, I've put together a bentto box with all the essentials - including one of my favorite individual ham casseroles. This recipe has been a hit in our household for years, and I love making small ones because they're so versatile.
There's nothing wrong with baking a big casserole dish full of breakfast goodness, but I've found that I prefer making smaller batches. Not only is it easier to serve, but you can also decide when you want to serve them. The great thing about these individual casseroles is that you can keep them in the freezer and just take them out whenever you need a quick breakfast. It's one of my favorite ways to prepare breakfast because it's so convenient.
I've made sausage versions of this recipe before, but today I'm going with a ham version. First things first, I whisk up 20 eggs into a bowl - feel free to adjust the number of eggs based on how many people you're serving. Once the eggs are fully incorporated, I add some salt and pepper, making sure not to overdo it since the ham is quite salty. I also like to give my eggs a little kick of heat with some chili powder, which adds just the right amount of flavor without overpowering everything else.
Next, I add in the diced onion, green bell pepper, and grated cheese - big pile of sharp cheddar, to be exact. You can use any combination of colors you like for the vegetables; it's completely up to personal preference. Now that all the ingredients are mixed together, I have to stir everything together thoroughly. This is where the magic happens!
Now that my mixture is ready, I need to get it into individual pans. I spray the pans lightly with cooking spray and fill them about 3/4 of the way full. Then, I bake these little casseroles at 350 degrees for 15 minutes, or until they're puffy and just barely set. Don't worry if they sink a bit after coming out of the oven - that's completely normal. When they cool down slightly, they'll be flash frozen on a sheet pan for about 45 minutes.
After the casseroles have finished freezing, I transfer them to individual bags and back into the freezer for safekeeping. And that's it! With this recipe, you can enjoy delicious breakfasts whenever you need them. Simply take out as many or as few casseroles as needed, let them thaw in the fridge overnight if desired, and then just microwave them for about 30 seconds.

always having options in the freezer okay all of this ham goes in and then just three more things I've got some really finely diced onion for a little green I've got got some diced green bell pepper and you can have some fun with this you can use yellow bell pepper red anything you've got in the produce drawer and cheese of course big pile of grated sharp cheddar okay now I got to stir all this together the little individual casseroles are so versatile all you have to do is just pull them out of the freezer you can let them thaw in the fridge overnight if you want and then next day just
