Black Sesame Ice Cream: A Delicious and Unique Recipe

Now, let's get started with the ingredients needed for this delicious treat. We've got heavy cream, milk, one egg yolk, a little bit of maple syrup, some sugar, black sesame seeds, a little bit of vanilla extract or vanilla paste, and black sesame butter (or tahini). To start, we need to toast our black sesame seeds a little bit until they're nice and fragrant. We want them to be toasted so that they don't come out raw, as that's not what we're looking for in this recipe.

Once our sesame seeds are toasted, we'll grind them up and set aside a few extras for garnish. You can use these extra seeds to add some extra flavor and texture to your ice cream. Don't worry if the grinder gets clogged a bit - it's normal! Just scrape out any remaining seeds with a toothpick or chopstick, and you're good to go.

Next, we'll mix together our egg yolk and sugar. This is where things get a bit chunky, but don't worry - everything will come together in the end. We want to whip this mixture until it's nice and smooth and light, almost like whipped cream. Make sure to scrape down the sides of the bowl as you go to avoid any lumps.

Now it's time to add our milk to the mix. Before we do that, let's quickly microwave our milk with a pinch of salt to warm it up. We want to make sure everything is nice and hot before we add in the egg yolk mixture. Once the milk is warmed up, we can whisk it into the egg yolk mixture until everything is fully incorporated.

Moving on to the cream, we'll whip up some heavy cream with a little bit of salt and vanilla paste (or extract). This will give our ice cream a nice texture and flavor. We want to make sure not to over-whip the cream, as this can cause it to become too stiff.

Now that we have both mixtures ready, let's fold them together carefully until everything is fully incorporated. This is where the magic happens - by folding in more air and mixing everything together, we'll create a smooth and creamy ice cream.

Finally, let's get our ice cream into the frozen ice cream insert! We'll use one of those little hand crank ice cream machines that I've used before on my previous videos. Simply add the ingredients to the machine, attach the lid, and slowly turn the crank while it freezes. This will incorporate even more air and ensure that our ice cream is nice and smooth.

and use code love your food on checkout for 15 off your order in the meantime here's our ingredients for the black sesame ice cream we've got some heavy cream some milk one egg yolk a little bit of maple syrup some sugar some black sesame seeds a little bit of vanilla extract or vanilla paste and some black sesame butter sometimes just like black sesame tahini almost so the first thing we're going to do is just toast our black sesame seeds a little bit now we want them they don't come toasted they're not black because they're toasted so we want to get those a little bit toasty and then here's our egg yolk now once the sesame seeds are toasted we're gonna grind them up and you also might want a few extras just set aside for garnish we didn't do that but it could it's sometimes quite nice now the one thing you'll notice about black sesame is that it does kind of leave a little ring around your grinder don't worry about that it'll come out just scrape it out with a toothpick or um a chopstick whatever you have and then we're going to mix together our egg yolk and the sugar now this is a lot of sugar and only one egg yolk so it's gonna look pretty chunky until everything sort of comes together here and you want to whip this together until it is nice and smooth and light I'm quite Light In Color there you go you can see it there it's all very fluffy and then we're going to add our milk in here now we actually just microwave the milk for a little while first in goes the ground black sesame the ground black sesame seeds and our maple syrup goes in next and you want to make sure you get all of that out of there and then we're going to add in our Sesame paste or black sesame paste or black sesame butter and that's just going to go in there we're going to mix all these together and while this is happening our milk we're just scalding that really quickly in the in the microwave um you can do it on the stove if you prefer it doesn't need to be super super super hot we're going to be cooking this afterwards as well and here's what it all looks like when it's mixed well together uh the one thing that you know we've definitely heard people complain about black sesame ice cream is the great color is off-putting I get it it's not a super amazing delicious looking color that's just the color it is it doesn't uh it tastes amazing so we're going to add in our milk very slowly we don't want to cook those we don't want to scramble the egg yolk in there so we're basically just tempering that until all of the milk is in there and then we're going to give it a nice good stir the cream is going to come later we're going to be whipping that and adding that in a little bit later so once that's all well combined we're going to add that back into a pot and we're going to cook this together for a little while now you'll notice we're using a fork instead of a whisk for this we're using uh we're using that because we have very few it's a small amount so we don't a whisk is not super practical for this amount of uh of ice cream but once it's cooked for a little while it started to thicken up a little bit uh we're gonna shock this so we're making an ice bath here and we're going to put a nice metal Bowl in there until it gets nice and cold and then in goes our mixture uh into the metal bowl and we're just going to stir that for a while and it's going to continue to thicken in that cold Bowl as it comes together now if you find that it's not quite thick enough you can add in the egg white as well you want to whip it a little bit first and you can you can use the whole egg instead of just the egg yolk we found it added a little bit of extra bulk to the whole recipe and then once that is fully cooled we're going to scrape that into a bowl and we want this to be cold when we're ready to make it into ice cream so there we go we're going to get the lid on that and that is going to go into the fridge it can sit overnight it can sit uh just for a few hours you just want to make sure it's good and cold so once that adds completely chilled we're going to get our cream ready so here's our heavy cream a little dash of salt a little bit of that vanilla paste again you can use vanilla extract if you prefer we had vanilla paste on hand we like how it uh we just like how you can see the little bits of vanilla in there and then we're just gonna whip that um again we're using our little hand blender here instead of a whisk and there we go we're just going for um whipped cream here and we found it was easier to mix the uh ice cream mixture into the whipped cream now what this is going to do is it's going to incorporate a little bit of air it's going to make it a little bit lighter and as it freezes as your ice cream freezes it's going to make it so that it's not quite so dense or hard in the freezer and we're just going to fold that together carefully until it's all well combined and then we've got one of those little hand crank ice cream machines you've seen us use this before on our previous ice cream video so you just want to get all of your ice cream into your Frozen ice cream insert here and then uh you you add the crank and the lid and slowly turn it and what that does is it once again is going to incorporate more air and make sure that it's not just a solid lump of of ice you want to make sure that it's a little bit lighter and fluffier and you can see it's already started to freeze a little bit there's some stuck to the edges it's uh definitely very very cold and then after a little while you get this now this is pretty close to done it's still quite soft because uh it's not been really in the freezer so we're going to take this out of here and we're going to let this sit in the freezer for a little while you can see it's quite soft now unfortunately these little hand crank ones don't stay super cold forever because the insert comes out of the freezer and it starts to uh it starts to thaw then after it's been in the freezer for a while you can see now we didn't let this sit for extremely long time but it is frozen it is frozen all the way through it's a really nice texture actually right now and that's our black sesame ice cream and that's it that's the whole thing I really love this ice cream again don't let the gray color put you off because it is delicious I love black sesame as a flavor
