"WEBVTTKind: captionsLanguage: ensmoke me a fatty brisket I got my barbecue shoes on so these here are some spare parts from a car that we got from the Butcher Store oh well it was a stair I think and it's bone marrow and it's pretty much the nectar of the cow this Rich delicate uh bone marrow running through the bones here so we're gonna put it on the grill at about 350. it's not going to take very long um we're not going to not do much to it other than give it some salt and a little pepper because it has a flavor in its own right we don't want to overpower it so simply it's like if I went to the butcher I would you would just sort of ask what can you style or whatever you yeah this is this is a canoe because it becomes yeah the canoe once the marrow is gone for the best part so yeah ask for the canoe cut they'll cut it lengthways like this you can see they were both these used to be together you know at home so yeah and it doesn't really matter you don't have to worry about too much detail here because you're not actually eating this so you can clean it up if you want but you know we're leaving it that's all it matters so I'm just going to put some some kosher salt over here not very much we don't need to add any oil this is pure right there and I'll put some pepperoni so we're going to cook them on indirect heat and it might take well we're going to cook them to the point where the marrows just starts to boil you don't want it to to get so hot that it wants to start running out the end of the bone foreign we just roasted it directly over charcoal as hot as we can get it right up against the flame and chucked it into a glass of cold water and it works good dipped in salt maybe with a little olive oil or something and I'm gonna put some olive oil okay let's let's have a look in here we're getting pretty close we're sitting on about 400 we've got a good Heat you can see it's just starting to Bubble Up so a little bit of way to go yet it's starting to Bubble now holy Karma look at that wow do you have any straws I think we need to we might need to drink some of this with a straw I don't know a little salt on the side for those who need it and a spoon yep one for you one for me I'm just gonna put a tiny bench on there too much knock it out all right wow it's so delicious something you do with bone marrow here in Canada which is called the
