week that's how our onions looking after a nice trip to the cutting board next we're moving on to our jalapeno which is optional if you're not a fan of spice you can leave this out or just use a bell pepper another way to reduce the spice is to remove the seeds that's where all of the spices packed in the jalapeno so if you remove those you'll be doing yourself a favor these gloves definitely come in handy for this though you don't want to do this bare-handed but if you have to make sure you wash your hands afterwards or if you touch your eye you'll be crying for the rest of the day like your girlfriend left you and you know you'll be in the comments telling me all about it don't forget to wash your hands people or wear some gloves there we go just dicing those up about the same size as our onion pieces looking good jalapeno adds a nice bit of flavor to this dish doesn't add a ton of spice just enough in my opinion i think one you know good size jalapeno is all you need but if you're cheese which is going to add a little bit of spice some great flavor you can buy the pre-shredded stuff if you want but remember it does have anti-caking agents built into it or added to it and that uh makes your your sauce not quite as smooth so i recommend shredding your own cheese looking good now we're going to add one can of rotel i like the fire roasted variety i think it adds a lot more flavor but use whatever you got or whatever you like no need to drain that either we're just going to work that in looking good once all of those ingredients have come together you definitely want to taste as you go adjust the seasoning into your profile as always and then we're going to finally add in that pepper jack cheese and allow that to melt in there and you're going to have yourselves your new favorite queso dip you can substitute the beef with turkey or chicken whatever you like you notice i use the beef chorizo here for my no pork folks try to switch it up for you every once in a while just work in that pepper jack cheese until it's nice and melted we want everything to be smooth man that looks good you could just give me a spoon and sit me in a corner with that i'll be good
