Today, we're excited to share with you one of our favorite recipes that's perfect for the weekend - stacked chili cheese fries! The story behind this dish is quite interesting. We were on vacation at a famous restaurant (yes, I won't mention the name, but maybe we'll hold a draw and let you guess!), and we ordered these up. Were they ever good? Well, we thought we had to try and reproduce this dish when we got back home.

To start making our stacked chili cheese fries, we need some shoestring fries. You can use just about any fry you want or even make them from scratch for that matter. We'll distribute them into the bottom of a baking tray. Now, let's preheat our oven to 480°F (250°C). We'll place the fries in the oven for about 15-20 minutes until they're nicely browned. You can also deep fry these if you prefer, but we find baking them just a little bit healthier.

While the fries are cooking, let's get started on the ground beef. Brown it in a preheated pan with some oil, breaking it up into pieces and seasoning it with salt and freshly ground pepper. We'll stir it over medium-high heat for about 3-4 minutes until it's nicely browned. Set it aside for now.

Next, let's make our white sauce. Place the butter in a preheated pan followed by the flour. Whisk this continuously over low heat until the flour is completely dissolved. Then, add in the milk and stir continuously until the sauce is smooth, thick, and creamy. We'll turn off the heat and add in the cheddar cheese. Whisk it continuously until the cheese is well dissolved in the sauce.

Now that our white sauce is ready, let's get started on adding our toppings. We have diced-up tomatoes, chopped onions, previously fried ground beef, hot jalapeno peppers (you can use fresh ones if you wish), and of course, our cheese sauce. After about 15-20 minutes, our fries are nicely browned, so we'll remove them from the oven and place them on a platter. We have dinner guests coming over, so let's use two platters.

Now, it's time to add our toppings. We'll start with the cheese sauce followed by the ground beef, then a generous application of tomatoes, onions, jalapeno peppers, and finally, our cheese sauce again. You can always add as much or as little of the toppings as you want. And there you have it - our stacked chili cheese fries!

we'll whisk this continuously until the cheese is well dissolved in the sauce and everything is well Incorporated until it's just about like this now I've gone ahead and given it a taste test and it is incredibly cheesy and creamy now what I have here are the toppings beginning with some tomatoes that I've diced up finally chopped onions our previously fried ground beef some hot jalapeno peppers now you can use fresh jalapeno peppers if you wish and our cheese sauce now after about 15 to 20 minutes our fries are nicely Brown so we're going to remove them from the oven place them on a platter in this case we have dinner guests coming over so we're going to use a couple of platters and now we're going to begin adding our toppings beginning with the cheese sauce followed by the ground beef a nice generous application of tomatoes of course you can always add as much or as little of the toppings as you want the onions and last but not least our jalapeno peppers and there you have it our
