Take Your Kebabs Up a Notch

Building Flavorful Skewers with Danielle from Kosher Com

Hey everyone, it's Danielle back again on kosher com with a really fun dinner recipe for you this one is really interactive! It gets the kids involved, everybody gets to customize what they want to eat, and it just brings it to life really in a way that your kids will want to eat it because they were involved in making it. So, what we're doing today is we're making kebabs and we're going to make a really yummy marinade to kind of bring them to the next level.

First things first, we want to build our really flavorful sauce. I have a food processor here, and I'm just gonna dump in some garlic. I like to put the garlic in first because it's a little bit harder and denser than the parsley and scallions. If we had added all of them at the same time, by the time we got the garlic to the right consistency, the scallions and parsley would have just turned to mush. So, I like to give that a little head start. Now, we're just gonna dump everything else - the scallions, parsley, lime juice, lime zest, pepper, salt, and oil - into the food processor. You can use this marinade on anything; it's really versatile.

I'm going in with a generous amount of lime juice and lime zest because that's what gives the marinade its unique flavor. You could easily swap out the lime for lemon or orange if you prefer. I've added tons of lime zest, which makes the flavor even better. Now, we're just gonna pulse everything up again until it reaches the right consistency. When we add the oil, it will help bind everything together.

As we pulse, it smells so good! Okay, now that I have all the ingredients to almost the size I want them, I'm going to turn on the processor and slowly stream in my oil. This is going to help everything come together. Oh my gosh, it smells amazing! I'm just gonna scrape everything off because we don't want any of the flavor lost. Look at that color; can you see how gorgeous that looks? The glue is holding everything together beautifully, and the smell is so fresh and delicious.

Now that our marinade is ready, let's pour it into a bowl and move on to building our kebab bar. We're going to start by getting our marinade on everything. I have a bowl here with a spoon, just gonna pour most of it onto the chicken because that's really what's going to soak up the flavor. Then, I'll put a little bit on each of my vegetables if you're nervous about the flavor or you like your vegetables plain, you could just put a little salt and pepper and olive oil on each of them.

I'm starting mixing up my veggies so that if there's someone who doesn't want chicken, they know it's not contaminated because the marinade has some acidity in it from the lime or lemon. Remember, we don't want this to marinate too long, so I'll do it just a few minutes before building the kebab bar.

Time to get building! This is where my kids are going to have fun. We're going to grab our skewers and let them pick what they want. Since today was an exception, I'll show you how we do it. You just want to grab something on your kabob, like that onion, and swirl it around a little bit. If there's someone who doesn't want chicken, you know it's not contaminated because the marinade has some acidity in it from the lime or lemon.

We have skewers with just chicken, skewers with just veggies, skewers with no tomatoes, so everyone can choose exactly what they like. Nobody will be complaining when it comes to eating company! Now that our skewers are ready, I'm going to get them onto my grill pan and cook them until they're yummy and juicy.
