Peanut Butter Nutella No Bake Cookies

Today on The Stay-at-Home Chef, I'm showing you how to make peanut butter Nutella no baked cookies. This is one of my favorite cookies to make in the summer because you don't have to turn on the oven. I'm putting my own Nutella lover twist on the classic no bake cookies for a treat that's absolutely divine.

We're going to start over here on the stove, and we're going to start with 4 tablespoons of butter. A cup of sugar and then 1/4 cup of milk bring this to a boil over medium high heat while stirring constantly with a rubber spatula. You want to make sure you're stirring it constantly and scraping the sides and the bottom so that the sugar doesn't catch on the pan and burn once it comes to a boil. I'm going to remove it from the heat and bring it over here to the counter. You can see it's a nice soft yellow color and almost golden.

Then we're going to add in 1/4 cup of Nutella scrape that in there as well as 1/4 cup of peanut butter and 1 and 1/2 teaspoon of vanilla extract. That bubbles and boils. I'm going to stir this until it's smooth. There should be enough residual heat from the butter to melt the peanut butter and Nutella and create a nice smooth mixture. You can see it's nice and smooth with no more lumps. So, I'm going to add in two cups of old-fashioned rolled oats and start mixing that in once your oats seem evenly coated with the peanut butter Nutella mixture.

Line a baking sheet with either parchment paper or wax paper or you can just simply lay it out on your countertop. Then, I'm going to take spoonfuls of the batter and create little cookie mounds give a little space in between and lay them out on my cookie sheet. You should get about 12 to 15 cookies from the mix they will harden as they cool off so you can either leave them on the countertop to cool or to speed things up just pop them in the fridge. These cookies will stay good at room temperature for about 5 to 7 days if you don't eat them all first.
