Melting Chocolate and Setting Up for Success

I'm melting six ounces of unsweetened chocolate with a stick of unsalted butter for my double chocolate brownies. Jade is going to love these at the pool, and this is what's to make those brownies super duper decadent. The smaller the pieces, the faster it's going to melt, and we just put it over a double boiler. It's really the heat from the simmering water that will gently melt the chocolate into the butter.

The Butter and Chocolate Melted

So, the butter and the chocolate is melted now. We're going to take it off, all right, we're going to add three-quarters of a cup of sugar sweeten this baby up. We used unsweetened chocolate and we gotta sweeten it up with a little bit of sugar so sugar is in. We're gonna grab the eggs, so what I'm gonna do is while that's cooling down a little bit because you don't wanna add the eggs into the chocolate sugar mixture until the chocolate has sort of cooled down otherwise it'll scramble the eggs.

Adding the Eggs to the Chocolate Mixture

We're going to crack two whole eggs and one yolk into this bowl, and then we'll add it all into the chocolate. Two whole eggs now, if you like your brownies to be a little cakier, you can add all three eggs, whole eggs if you like them to be a little bit fudgier like I do, then you add two whole eggs and one yolk. It's the yolk that gives it that nice fudgy thick decadent texture that I just love and that jade loves too. Okay, we'll put the egg white aside all in there, okay, so now just quickly beat the eggs, okay done with the whisk.

You can already see that it's coming together a pinch of salt just to even out the sweetness and about a teaspoon of vanilla extract for a little extra rich sweetness. Now we're going to do half a cup of flour just to hold the brownies together, fold in the flour with a spatula, we're going to grab our dish and I've got some semi-sweet chocolate that I just cut up three-quarters of a cup, you can also use chocolate chips, and we're just gonna fold the semi-sweet chocolate right in there when it bakes the chocolate pieces they sort of just melt into the brownies awesome.

Adding Semi-Sweet Chocolate to the Batter

Now I'm gonna put it right into my baking dish and what I did with the baking dish is I just buttered it and then I put a piece of parchment, just like this after the brownies are baked and cooled. I can literally pull them out with the paper now, just kind of fold this fudgy double chocolate batter right on in there, chunks of chocolate, this is gonna make jade's day.

Putting the Brownies in the Oven

Okay, let it smooth out a little bit so we're gonna pop these in the oven at 325 for 30 minutes then you want to let them cool completely before you cut them up.
