A Simple and Delicious Breakfast Idea: Eggs and Salsa with Bacon
Hey guys, Dave is coming at you here with a very simple and easy breakfast idea that's nothing profound but incredibly delicious. You can make this breakfast in about 20-25 minutes, and it's perfect for busy mornings or special occasions. Today, we're going to show you how to make eggs and salsa, served with some crispy bacon.
To start, we need an oven-proof pan. Don't worry if it's not cast iron; any pan will do as long as it can withstand the heat of the oven. We'll be using a cup of mild salsa for this recipe. You can use medium or hot salsa if you prefer, but I just like to stick with the classic mild version that I found at the grocery store. The good news is that we don't have to make the salsa from scratch; it's already made and ready to go. We'll simply smooth out the salsa until it covers the bottom of the pan.
Next, we need to create four wells in the salsa where our eggs will sit. I love using a spoon to make these wells because it adds a bit of flair to our dish. You can use more or fewer wells depending on how many people you're serving. And if you're feeling fancy, you can use bigger pans and cook five or six eggs instead. Speaking of eggs, I recently got some farm-fresh eggs from the country, and let me tell you; they were absolutely delicious! Of course, we'll need to crack four eggs into our wells for this recipe.
Now it's time to season our eggs with a bit of salt, ground black pepper, and some chopped green onions. I like to use a fancy word for pepper – air – but don't worry if you're not familiar with that term. Just sprinkle a pinch over your eggs and add some sliced or chopped green onions on top. This will add a bit of freshness and flavor to our dish.
We'll now place the pan in a preheated oven at 400 degrees Fahrenheit for about 12 minutes, just until the yolks start to set. When they do, we'll remove the pan from the oven and sprinkle some shredded sharp cheddar cheese over the top. This is where things get really delicious – the cheese will melt and combine with the salsa and eggs in a way that's both savory and satisfying.
Finally, we'll return the pan to the oven for another three to five minutes, just until the yolks are cooked to your liking and the cheese is melted down. And that's it! Our eggs and salsa breakfast is ready. It's a fairly traditional dish with a twist – or should I say, a non-traditional twist? This breakfast is perfect for anyone looking for something quick, easy, and delicious. Serve it up with some crispy bacon and sausage, and your family will love it.
