uh they weigh about 2 lb a piece and uh let me show you how we're going to use these in this recipe now I've got some uh some veggies here and uh you're going to need some celery here we've got some sprigs of Rosemary we got some carrots here you're going to need some garlic you're going to need about at least 8 to 10 cloves of garlic you're going to need some lemon here you're going to need an onion and uh I happen to have some of these uh small corn cobs right there now that's something you may not be able to get but if you see them just grab them and uh you're going to need some butter you going need some pepper and salt here we've got some uh chicken stock or chicken broth and if you got any wine left over from the night before you're going to need a little bit of that and here I've got some small red potatoes you're going to need some small potatoes just like these all right let me clear the table off here because we're going to do some Veggie chop now uh here uh what you want to do cuz we're doing this uh one pan here and we're using a black iron pan don't let those potatoes get away from you now either uh you want to cut up your veggies into fairly small sizes so it all Cooks evenly with these cornish game heads I really don't need to be showing you how to do this but you know just peel a carrot cut it up in smaller pieces now the veg matics are really going to like this recipe cuz the pit boys are using a lot of veggies in this one now if you've never had these rock cornish game hens before you definitely want want to check these out and uh they're uh a little more expensive than a regular chicken but if uh you're looking to impress a new girly or maybe your boss is coming over and you're looking for a race you serve up some of these rock cornish game hands like this man and it's all good now peel up that onion chop it up now here's some cloves of garlic and we're not going to want to mince them or smash them we're just going to use these whole cloves of garlic and maybe 8 to 10 cloves of good or even more if you like garlic garlic goes real well with chicken as you know so and then you just want to skin these clothes simple as that all right we've got our garlic ready and uh then you're going to cut these even Small Potatoes up in halves because uh this like I said this uh Cooks real quick it's only going to take an hour a little over an hour to cook these cornish game H all right veggies are chopped we got the grill set up here for indirect heating cuz we're going to be using it like an oven and here's that black iron pan that's what makes this recipe great do it all in one pan all right now uh these chickens have been washed cleaned dried and I'm just pulling out the gizzards cuz we're going to save these chicken gizzards for uh for the oou or gravy we'll make uh when these cornish game H are done all right now I'm throwing in there a sprig of rosemary and uh little bit of onion now I know some of you are going to go man the barbecue pit boys are gone Frenchy on us they're putting aromatics in their chicken but nah if you got it just throw a little bit of that Rosemary in there it's going to take taste a couple tablespoons then if you got any wine left over from uh last night or just let's put a little bit of that wine in there when your girly sees this she might just want to stay overnight and then we're going to do some Bas and you do it about every 15 or 20 minutes just keep basting the chicken and the veggies like this with all those juices oh yeah and then you may have have to uh spin this pan around every once in a while just get some even cooking going on all right now like I said about 350° fah for about an hour maybe a little bit more depends how uh how hot your coals are all right about 15 minutes is gone by and uh we're going to come in here and we're going to start doing some basting this helps keep those cornish game hands real moist and tender put the cover on you getting hungry or what all right let's check these out we're about uh 45 minutes into this Browning up real nice oh yeah now those potatoes are still a little firm do some more basting man your grandma's going to be proudy all right let's check uh the internal temperature of these uh cornage game hens and we're looking for about 180° fah putting it right in the leg in the thigh area and they're just about done so this is where're going to make some gravy or some oou so we're going to pull off some of them uh drippings juices in there oh yeah you're doing up uh chicken you got to have some gravy
