Today, we're going down to the house of sausage and getting ready to do a top round steak, London Royal style! It's real easy to do here, and I've got my barbecue shoes on, so let's get started.
First things first, we need to cut off the excess fat from our top round steaks. These cuts also go by the name of top side silver side, and they're a real tough piece of steak with lots of muscle fibers. So, what you really need to do is marinate them! For this marinade, we're using about 12 to 16 oz of beer and adding to that about a half cup of olive oil. Then, we want to add about 1 teaspoon of cayenne pepper, about a tablespoon of garlic powder (or granulated garlic), about a teaspoon of onion powder, and a couple tablespoons of Worcestershire sauce. And don't forget about a tablespoon of fresh ground pepper corn, and finally, about 1 tablespoon of prepared horse radish! All right, there's your marinade, give it a good mix!
Now that we've got our marinade ready, let's throw a couple pieces into a 1-gallon freezer type bag and let them marinate at least four to six hours. And if you want, you can even let them marinate overnight for an even longer tenderization process. That way, the long marinade will help break down those muscle fibers, making our steaks nice and tender. And it smells good already! All right now, we're going to throw these back into our cooler or refrigerator.
Next, let's get that chimney charcoal starter going. We've marinated these round steaks for about six hours now, so we're ready to prepare them for the grill. But remember, too high of heat will burn your steaks, so be careful about how much fire you have going! Now that our charcoal is lit and it's time to get started.
You'll notice that these top round steaks are ready to go on the grill now. They're going to absorb all of that marinade we made, making them nice and juicy again! One of the best things about doing a London broil-style steak on the grill is that it's an economical piece of meat that goes a long way and gets real tasty. It'll take about eight minutes to cook per side, depending on how thick your steak is. So, let's get cooking!
To check for doneness, we're going to use the finger test! I like to do medium rare, so we want to aim for an internal temperature of around 130-135 degrees Fahrenheit. And right now, it looks like our steaks are just about done. It's time to flip them halfway through cooking.
Now that they're done, let's let them rest for a few minutes before cutting up. This is the trick to serving a perfect London broil top round steak – cut across the grain and then slice into thin pieces. And when you take that first bite... Oh man! You smell that it smells good, nice medium rare full of flavor!
