We're excited to share with you one of our favorite easy recipes that combines pork, shrimp, and shiitake mushrooms. The story behind this dish is quite interesting. Our friend gave us some shiitake mushrooms, and we were wondering what to do with them. We thought maybe they would pair well with some pork, so we added some shrimp to the mix, and the whole dish came together beautifully.
The beauty of this recipe lies in its simplicity and speed. You can throw it together in a matter of minutes, and it's absolutely delicious. So, let's get started!
To begin, we're going to add some oil to the pan that we've preheated. Once the oil is hot, we'll add in the garlic, chopped onions, and chopped tomatoes. We'll sauté these ingredients for a minute or two just until they're fragrant. This will help bring out their natural flavors and aromas.
Next, we'll add in the pork. You can use any type of pork you have on hand – pork shoulder, pork belly, or whatever you prefer. We'll follow it with some fish sauce, ground black pepper, and a stir-fry until the pork turns light brown. This will help develop the flavors and textures of the dish.
Now that our pork is nicely browned, we'll add in the shrimp that we've peeled and de-veined. We'll give this a quick stir until the shrimp changes color to pink. This indicates that they're cooked through and ready to eat.
After adding the shrimp, we'll pour in some water, slip on a lid, and allow it to simmer over low heat for about 30 minutes. Depending on the size of your pork cubes, you may need to adjust this time slightly. We're using fairly small cubes, so 30 minutes should be fine.

We'll slip the lid back on and allow this to simmer for another three to five minutes. This will help all the flavors meld together and intensify. And when you take that first spoonful... wow! The aroma alone is incredible.
