**The Joy of Baking: A Cookie Making Experience**
I'm so excited to share with you my latest baking adventure! Today, I decided to whip up a batch of cookies that would surely bring a smile to anyone's face. The cookies were a delightful combination of flavors and textures that left me wondering how I ever lived without them. As I began to mix and measure the ingredients, I couldn't help but feel a sense of excitement and anticipation. Little did I know that my audio issues would make this experience even more entertaining!
As I scooped out tablespoon-sized balls of cookie dough into the cinnamon sugar mixture, I was reminded of the classic snickerdoodle. The process was meditative, with each scoop feeling like a mini ceremony. Pressing them down to about 1/4 of an inch thick made me feel like I was creating something truly special. And when I finally baked them in my oven and took out the trays, oh! Beautiful cookies they were.
I decided to make not one, but two batches of cookies: double chocolate chip with pecans and Taylor Swift's chai cookie. The first batch was a classic chocolate chip cookie recipe, but with an added twist - white chocolate chips and pecans made it a unique variation that I just couldn't resist. And then there were the Taylor Swift's chai cookies, which were a completely different ball game altogether. Inspired by the flavors of chai, these cookies had a texture similar to sugar cookies and a buttery flavor that was spot on.
Before starting the filming process, I made sure to test my audio equipment, or rather, try not to. My Panasonic Eneloop batteries didn't fare too well, dying on me within an hour of use. (laughs)Next, we're gonna add our baking soda,which we've dissolved in hot water.In a separate bowl,we're gonna combine allour dry ingredients.We're gonna combine our all-purpose flourand our pastry flour.Pastry flour has lower glutencontent or lower proteinso it doesn't have asmuch of a chewy texture,so it's really greatfor cakes and pastries.Along with our baking powder,our cinnamon, and salt.Just stir that all together.Combine our dry ingredientsto our wet in two batches.We're gonna add some milk chocolate chips,white chocolate chips,and some chopped pecans.Then we just mix that all togetheruntil it forms a luscious dough,and then put this in the refrigeratorand let it rest for afew hours or overnight.Alrighty, so here is ourchilled and rested dough.I find it very interestingthat it contains both whiteand milk chocolate chipsand cinnamon.So one of my favoritechocolate chip cookie recipes,it's the DoubleTree Inn cookie recipe,put a link to that, incase you're curious,contains a little pinch of cinnamon.And I thought, no, it's not gonna work.But it works.But a full teaspoon seems like a lot.But I don't know, we'regonna see how it goes.It says in the recipeto allow the cookie batterto warm up before you bake.So for smaller cookies, whichI would consider this smaller,it recommends baking thesefor eight to 10 minutesat 350 degrees.(soft music)In our stand mixer,we're going to add some roomtemperature butter, bloop,and we're gonna beatthis for about one minuteuntil it's nice and creamy.And whenever you're using astand mixer, it's always great,or even a hand mixer for that matter,to scrape down the sides of the bowl.Now we're gonna add another fat,we're gonna add some vegetable oil.This happens to be safflower oil.Now we're gonna add two types of sugar,both powdered sugar and granulated sugar,which I find interesting too.This recipe is chai inspired,which simply means tea,but we're specifically talkingabout Indian-style tea,which is often infused with all kindsof warm-scented spices:ginger, cinnamon, allspice, nutmeg,freshly ground cardamom, clove,and some freshly cracked black pepper.Seven beautiful things,all in our creaminess.(timer beeping)Oh, that means my cookies are ready.Okay, coming!Now we're gonna combine the spicesinto the fat and sugar.I've got my all-purpose flour here.I'm gonna add my bakingsoda and my salt to that,and add it to my wet ingredients.So, I've got a bowl ofcinnamon sugar here.There's about 1/4 cup of sugarwith 1/2 teaspoon of cinnamon in there.We're gonna scoop a ball of cookie dough,again, about one tablespoon,into the cinnamon sugar.So it's kind of like a snickerdoodle.And then press it down toabout 1/4 of an inch thick.Cute! Beautiful cookies.I'm gonna bake these in my oven,and we'll come back and glaze themand then give everything a taste.Oh, lovelies, I have, thesethings give me trust issues.Okay, audio died again. (laughs)Before I started filming,I changed my batteries,my rechargeable batteries,my Panasonic enloop, eneloop, trash!My other ones were dying,which I had for years,but those were the dark gray onesand those were the eneloop pros,and they lasted forever.These? These don't evenlast me one filming session.Before I started filming, charged these,just took 'em outta the charger.Didn't even last me an hour. Crap.So, buy the pro ones, okay?Don't get the white ones. All right.Sometimes you just have torelease that and let it goand... and taste some cookies.So, I baked both batches of cookies.I also made the glaze forthe Taylor Swift cookies.Super simple.You just take some powdered sugar,add a little bit of grated nutmeg to it,and you can add milk, cream, or eggnog,which I think is genius.Spreadable, but not drippy,you know what I mean?My kitchen smells amazing.So let's finally give our cookies a taste.So, let's start with the chocolate chip.This is like the double chocolate chip.It's white chocolate,milk chocolate, and pecan.There's the bottom.A thin, lacy cookie.Look at that.Lots of brown sugar,so I'm thinking it's gonnabe a little bit chewy.Itadakimasu.Hmm!First of all, a freshly baked cookieis the best!Freshly baked cookies are my favorite,and I really have a soft spotfor chocolate chip cookies.And these are delicious.Buttery, chewy from all that brown sugar,yet a little bit crispon the edges, but soft.I like the chew.The cinnamon is not overpowering at all,goes really well with the chocolate chips,white chocolate chips,I have to say I was alittle bit skeptical.I really love the inclusion of the pecans.There's something about the pecans,and I'm guessing the cinnamon,that make these almosttaste butterscotchy.Oh, the white chocolate, mm-hmm.It's a very nice variationof a chocolate chip cookie.Alrighty, let's try TaylorSwift's chai cookie.Here we go. Itadakimasu.Ooh!Wow! Very different.This is like comparingapples and oranges here.It's not two differentchocolate chip cookie recipes,so it's really difficult to compare them.This has the texture of a sugar cookieand a bit of that buttery flavor,but this is intensely flavoredwith all those spices we added in thereand very much inspired by chai.All those flavors, I feel, are spot on.It's intensely flavored.The cookie texture is lovely.It's tender, yet rich,and I really love the icing on top.Adds an extra amount of sweetnessand kind of like a crackly top.Crackly, yet melt away,with a nice sweet intensitythat matches really wellwith the flavor intensity of a cookie.This is a very flavorful cookie,and I think it would goincredible with a cup of tea,a cup of coffee, a little dip, and uh-huh.Hmm.
