The Grilled Nashville Hot Chicken

some flour you're going to need some salt you're going to need some black pepper you're going to need some brown sugar you're going to need some paprika cayenne pepper chili powder granulated garlic some good quality pickles you're going to need some buttermilk and a few shakes of hot sauce and for the chicken we're using skinless boneless chicken brass now let's put this recipe together now the first thing we're going to do is make a brine for the chicken breast we want to get that chicken real tender right and this is a good way to do it we're going to soak it in some buttermilk for at least a couple hours maybe overnight now add a couple drops of hot sauce some heat in there of course we're going to season a little bit with some salt a little bit of black black pepper man I'll tell you what you got a brine if you really want to make it fine now here we have some pickle juice we're going to add a few drops in there give it a mix now the enzymes and buttermilk will break down the protein in the chicken and make it tender that's why you use the buttermilk perfect now like I said you want to take your chicken breasts and marinate these overnight for at least 2 3 4 hours whatever it will make them tender so uh all right here are the chicken breast typical you'll find anywhere a great piece of meat but it's basically tasteless right I mean there's no fat in it so it needs a lot of help so what we're going to do here right is slice these breasts in half so one instead of one big chicken breast we got too do the math right again take your 10-in butcher slice it and cut it perfect step one to make it them tender now you want to pound them out this will help tenderize those chicken breasts as well so you flatten them out and it also makes it even right for frying and that's where we're going to end up frying these boneless skinless chicken breasts just pound them out with a mallet perfect now if you've never had Nashville hot chicken before you definitely got to check it out it's some good eating at the pit now we're going to take these uh skinless boneless chicken breasts and we're going to put them in this uh brine or marinade for at least 2 hours or overnight now for the flour we want to season the flour so we're using allpurpose flour season it with some salt some pepper you always want to season your friy flour right right perfect here we're adding a little bit of garlic perfect right give it a mix oh man this is going to be good all right let's do the dipping so few hours have gone by through the miracle of time and we're going to take these chicken breasts out of the marinade and get them in that allpurpose flour and dredge it good and because we want these extra crispy right unlike the big fast food chains we're going to be double dipping go from the brine to the flour and then from the flow back to the brine then from the brine to the flour double dip make them real crispy by doing it this way well you know now about that right oh man this is going to be good now we're going to let them rest for a while it'll make a better fry for you right everything will come together now the frying part we're going to use our cast iron pan on our Kettle you can use what fryer you got right and we're going to fry them at about 350° F more or less in that range and it won't take long to do and you want to keep flipping right this will allow the um the chicken fried to set up right and it'll get real crispy you just slowly do this and you keep flipping perfect now we want an internal temperature of 160° f for this uh boneless chicken breast that's just about perfect oh we're going to be eating good tonight Martha loving this Nashville hot chicken and this is what you got Lord have mercy can you smell that it smells good now let's make the hot sauce by combining Cayenne chili powder some sugar and a paprika oh I tell you what this is what this Nashville hot chicken is all about right there box right that's easy to do you blend the ingredients head on over to your fry you just Ladle off a little bit of that oil into these ingredients you got yourself a Nashville hot sauce oh man you got to check this out I'm
