In this episode of "Employees Only," Jaime Geller is joined by Chef Hellmutt Bubble in Allenby Kitchen, where old meets new for fresh taste on Israeli cuisine. The kitchen is filled with the aroma of delicious treats, and Jaime can't wait to see what Chef Bubble has in store.

"I would not leave without you making me dessert so krembo," Jaime says, referring to one of Israel's classic desserts. "You always kick it up a notch." Chef Bubble takes this as an opportunity to introduce himself and his cooking style, which blends traditional Israeli flavors with modern twists.

Today's dessert is a reimagined crème brûlée, featuring fresh mandarin oranges and caramelized pop rocks. The combination of textures and flavors sounds intriguing, and Jaime can't wait to taste it. "You guys don't understand the level of patience this takes," Chef Bubble says, referring to the process of creating such a complex dessert.

As Chef Bubble begins to assemble the crème brûlée, Jaime observes in awe. The kitchen is filled with an array of colorful ingredients, including chocolate olive oil and soda powder. "We're going to thicken that chocolate wheel brakes," Chef Bubble explains, as he carefully pours the mixture into a mold.

The finished product is a stunning work of art, featuring layers of creamy custard, caramelized pop rocks, and fresh mandarin oranges. Jaime is impressed by the presentation, but also eager to taste the final product. "This is going to be a party on the toilet," Chef Bubble jokes, as he adds a sprinkle of sugar on top.

As they take their first bites, the room falls silent in anticipation. The combination of flavors and textures is unlike anything Jaime has ever tasted before. The crunch from the pop rocks provides a delightful contrast to the smooth custard, while the fresh mandarin oranges add a burst of citrus flavor.
