Chili with Naomi Nachman, Sunny Side Up!

The Art of Cooking Comfort Food: A Family Affair

I'm Naomi, and I love to eat comfort food. My family will sit around and enjoy a big, fat bowl of chili together, sharing stories and laughter while savoring each bite. To create this delightful meal, we start with a fundamental component: fried onions. As my grandmother once said, "Every great recipe starts off with a fried onion." And I couldn't agree more. For me, the smell of cooking onions is absolute heaven. The way they give off that fantastic sound as they cook is music to my ears.

I'm using a combination of canola oil and olive oil in this recipe. While olive oil might burn a bit faster, it's also more prone to burning than canola oil, which takes heat for a little longer. I love the smell of canola oil and find it adds a unique flavor to our dish. As the onions cook, they release that wonderful sound that I just can't get enough of – it's like they're speaking to us as they cook! Now, I'm going to add in my jalap peppers and garlic, letting them cook off along with the onions until they're nice and soft.

As we continue cooking, our pot is starting to fill with an incredible aroma. The flavors are melding together beautifully, and I can hardly wait to see what our finished dish will look like. Let's take a closer look at what we have so far: the onions are translucent, the jalap peppers are slightly softened, and the garlic has added its own special flavor to the pot. Now it's time to add in some of the meat – I'm using a combination of different types to give our chili depth and complexity.

As the meat cooks down, we start to see the magic happen. The flavors begin to meld together, and our dish is taking shape. Next, I'll be adding in my other vegetables – carrots, potatoes, and green beans will all get their chance to shine in this hearty stew. Meanwhile, the onions and jalap peppers are starting to caramelize, adding a rich, sweet flavor to the pot.

Now it's time to add in the final ingredients that will give our chili its signature flavor: pizza sauce, tomatoes, coffee, beer, cumin, beans, green chilies, barbecue sauce, and kosher salt. I love the way these flavors all come together – each one adds its own unique character to our dish. And let's not forget the importance of a pinch of kosher salt – it makes all the difference in bringing out the full flavor of our ingredients.

With everything added to the pot, I'm now going to give it a good stir and let us simmer on low for at least an hour. This will allow all the flavors to meld together and concentrate, creating a rich, satisfying stew that's sure to become a family favorite.
