The Art of Cajun Chicken: A Step-by-Step Guide

To begin with, we need to grab ourselves up about three medium chicken breasts and cut them in half just so they fry a little faster. This will also help us achieve a nice sear on both sides of the chicken. Now that our chicken is prepared, let's season it up with some salt, ground black pepper, and my all-time favorite Cajun seasoning. As we are using a teaspoon of two of Cajun seasoning, I'll be fairly generous with this, as I just love the flavor it brings to the dish. You can pick up this seasoning in just about any grocery store, but if you want to make it from scratch, I've included a link to the recipe in the description section of the video.

Once we have our chicken seasoned, let's move on to cooking it. We'll place the chicken in a skillet over medium-high heat, using a cast iron skillet as an option, or any pan that suits your needs. Place the chicken in and fry this up until it's cooked through, ensuring we get a nice sear happening on both sides. As we flip the chicken, we'll also achieve a nice kind of sear happening there, thanks to its fair thickness. Since the chicken is cut in half, it doesn't take long to cook. Now that our chicken is nicely cooked up, let's pull it out and set it aside on a plate.

As we have our chicken prepared, don't touch the pan, as wonderful flavors are about to be added! I'll add in a good knob of butter, which is approximately about a tablespoon, and let this melt down a bit more. With three cloves of chopped garlic and half a small chopped onion, I'll just let this sauté for 30 seconds to a minute until that wonderful flavor fills the air or aroma. This brings us to what's known as the Cajun trinity - but actually, it consists of onions, bell peppers, and celery. A stalk of about half a small one can be used, and about a quarter cup of sun-dried tomatoes will add an extra layer of flavor.

As we continue cooking, we'll let this sauté down over medium heat for about four or five minutes, allowing the flavors to meld together beautifully. To clarify, guys, the Cajun trinity is actually the onions, bell peppers, and celery - I may have made that clear earlier, but no worries! Once we've cooked it down here, we'll add in some chicken stock, using chicken stock not beef broth, as well as some heavy cream to give this a creamy texture. We'll season this up with a bit more pepper and a little bit more Cajun seasoning for extra flavor.

Now that our sauce is ready, let's bring it to a boil by adding the chicken back in. As we simmer this away while spooning some of that sauce over the top for another five or ten minutes, you'll be rewarded with an incredibly delicious dish. After about ten minutes, we are done cooking! I'll just kill the heat and voilà - there you have it, my friends, our mouth-watering creamy Cajun chicken is ready to be devoured.
