I've been working on my mango cake skills for what feels like an eternity, and I'm thrilled to report that they're looking more realistic by the day. It all started when I brushed on a little bit of green and then added some brown around the edge. The result was a beautiful, brown-colored background that seemed to whisper "mango." But, as any seasoned cake decorator knows, it's not just about throwing some colors together – it's about creating a cohesive look that transports you to a tropical paradise.

To achieve this effect, I use a combination of green and yellow food coloring. Yes, you read that right – both green and yellow! The key is to find the perfect balance between the two, so the mango doesn't end up looking too pale or washed out. yes so i mean uh you'll have to have a model that you cut open awkward awkward next thing i want to do is stack my cakes together and figure out how to shape a mango and for each mango i'm going to use two nine inch rounds stacked on top of each other and then i'm going to cut the eight inch round in half please tell me that's what i did yeah it is and stacked it up yes and then i'm gonna cut the eight inch round in half and then butt it up against the end and now it's more of like an oval shape like a mango so first question i feel like this one everyone should be able to answer even you at home what is the name of this channel walter uh no that's definitely not the name now i'm gonna begin carving the two-dimensional sort of imperfect oval that a mango is you know what i mean it's like more oval at the top and pointier at the bottom is it two-dimensional or three-dimensional no at this point it's too high because it's flat so the first thing i wanted to do is just cut out the oval and then i'll begin to round then it'll be three-dimensional and i'm keeping my scraps very important so as i carve that cake away i'm going to keep the bigger chunks reserved aside because i might use it i actually i already know i will use it on top now i'm going to use my serrated knife to just carve and round down the top edges and underneath the bottom edge and then i'm going to use those cake scraps to give my mango more body i want you know what i mean bodacious bodacious mangolita is bodacious she is juicy she's right this is getting a lot now is it she's nobody here's the thing i love about mangoes i like them not ripe in like a thai mango salad and then i love them right can't say that about watermelons can you can't really say that about many fruit that is very true mangolitas are one mango lita is always ready to go yeah now that i'm happy with the shape of both of my mangoes i'm going to carefully lift the layers off one another and so squeeze is here to simple syrup you seem more bitter about sir squeeze today than usual like what did he eat what did he do now oh you know he just invited himself on my vacation i mean my actual vacation i don't mean that i just left set i mean he came to spain he was in first class i was in coat oh my god oh he clearly thought it was he acted like it was his trip he acted like he's the one who planned to go to spain and i tagged along that's not what happened no understanding what so everywhere i looked there he was so i haven't even told them yet jocelyn i'm gonna make mango buttercream to put it in my mango cakes i'm filling my mango cake with mango buttercream so the first thing i want to do is peel a cup of mangoes cut off all the flesh pop it into a food processor and then blend it mango's really nice when you blend it because it sort of thickens itself the consistency of mango so it's a nice puree it doesn't water down it doesn't get watery yeah you still always have to be careful when you're adding liquid to buttercream you want to add a little at a time really i actually used a whisk it really helps to make sure it's incorporated and then on top of that i added some food coloring so that it would match my cake as best as possible i used the same food coloring that i did in the batter until i felt that it looked good enough next question what is my favorite cake walter give me a moment what is my favorite cake on the channel yes walter obviously you haven't been watching mangolita yes it is my thanksgiving roasted turkey now i can fill and stack my cakes basically put them back together in the shape of mangoes and then i'm gonna crumb coat both of them in the same mango buttercream and chill what am i doing i'm going to love it i'm going to end there's an end on there you're right i'm going to yes once my crumb coat is chilled i'm going to ice these cakes one more time with more mango buttercream and i'm using my invention uh my invention is just a square piece of acetate i didn't really invent it i just like calling it that so i have dyed some fondant in a similar mango color it actually matches the cakes quite well oh my god how many people are coming to the set today they heard about my mango fondant they hurt drape it over each mango smooth it on smooth it right underneath anytime i have to tuck fondant underneath i just like to push it with my fingertips as far as it will go and then when i trim away the excess i do it sort of bit by bit and use my knife to tuck it under i've decided to dry brush these mangoes and i'm so happy i did so i'm using um yellow green and red colored dusts colored dusts they are not luster i haven't really met a metallic mango yet no maybe they exist i've never seen one ah and so for the first layer the first thing i'm gonna do is just brush over my already yellow fondant with some yellow colored dust and then the next thing i want to do is brush on some green i'm going to concentrate the green at the bottom of the mango because the models i had mangolita and her friends they seemed to ripen i guess from where they touch the tree the dry brushing i'm really loving because i'm getting a bit of texture which is what i wanted and i was afraid to make paint with alcohol because i didn't want to see any brush strokes on my mango what walter maybe i can finish the question you can't possibly know the answer what do i use to shower my cakes with simple syrup yes walter then you haven't answered why did you buzz walter why are you jumping on the buzzer if you are not planning to answer and now for the red i'm gonna brush on some red at the top of the mango and just sort of brush it down and the other thing you don't want it's not like a flag you don't want to see like like concrete lines between the colors more realistic you know what mangalita does have in common with walter though what she has a nub oh and now they all have no i don't think it's enough we've established even we know walter's nub is look like nipples so i was making it and i was like these look like nipples right and cody was like he literally laughed like a 13 year old school boy we've been sharing more behind the scenes with on and lift the paint off because if you rub it at that point it'll smudge you know mangoes are delicate mangolita is a sensitive soul so sometimes they get little like nicks and bruises so it just makes it look more realistic what is my favorite cake recipe like here's a clue okay yeah it involves another fruit walter no walter no it's that's not the answer mangolita yes i could have stopped here these are two gorgeous ripe mangoes but of course i like to torture myself so i thought to myself you know what i should do now i should just cut one of these cakes i finished and make sure it's 100 dry and then i'm going to take a big chef's knife and just sort of cut off a slice of the mango and you don't want to cut it directly in half because you want to remember mangoes have pits so act like there's a pit so i rolled out more of that yellow fondant really really thin and then i just cut out the oddly shaped oval i used a fondant rolling pin to roll the edges as thin as possible because i don't want it to look like there's you know a slice of fondant on top and then i laid it on my cake i just spread a tiny little bit of mango buttercream just like a thin crumb coat and then i laid my fondant on it has a bit of a seam but to make it less noticeable i just used a like a small exacto knife and i just trimmed away the edge of that fondant so and now what i want to do is just paint the surface so i'm going to use that same yellow color dust i used on the outside except i will dilute it with some clear food grade alcohol and then i also had a little bit of orange color dust and then i just sort of painted like a light sort of spiral in the center and blended it in now i'm gonna use some more fondant on the slice of mango to make it look like it's cubed because one thing i love about mango is when or when i eat it at least i cut it off and then i cut cubes right and then i i need to repeat this same process for now the cut slice of the mango but this time i didn't roll my fondant as thin i rolled it thicker in the center and thinner at the edge so that i would have something to physically cut through and i just sort of made a grit by chopping through the
