**The Impossible Pie: A Magical Creation**

So today, I'm going to be making an Impossible Pie, and you might be wondering why it has this impossible name. It's because the pie is supposed to make its own crust – no rolling of dough, no padding into a pie pan; just mix all the ingredients together in a blender, pour it into a pie dish, and it's supposed to magically separate and create its own crust.

I had totally forgotten about this recipe! I first learned about impossible pies in this book, and this is a recipe for an impossible cheeseburger pie. It uses Bisquik, which is a pancake mix that you can find here in the U.S. And while I was researching different impossible pie recipes, this coconut pie kept coming up – it doesn't use any kind of proprietary mixes or stuff. So, I thought I'd tackle that one first and see if I could make it work.

There are lots of impossible pies both sweet and savory, but the coconut one seemed a little bit more classic, a little bit more old-fashioned. It's called by different names – I've seen it called the hillbilly pie, crazy pie, crazy Amish pie. All the recipes seem to be pretty much the same, but this one is the one I'm going to reference today.

(eggs cracking)One egg, oh, I feel like TheCount, I feel like The Count.Isn't that funny how things are hardwired.(Imitating The Count)Two eggs, ah, ah, ah.You know I used to bekinda scared of Countwhen I was a kid and why, why do you havethose tiny teeth?Why are you obsessed with counting?And why do you have tosay ah, ah, ah each time?Don't know.I was also scared of theguy on The Muppet Show.The really, really bigSweetums I think his name waswith the big orangenose and the scary eyesand the snaggly teeth.Whew, scary.Right, four eggs.The reason why did the eggs that wayis to make sure I didn't have a bad egg.I've only had that happen to me once.But, good to be sure.One cup of sugar, boop.Quarter teaspoon of salt.Quarter teaspoon of baking powder.I guess this is gonna make the crust.You can add a half cup all-purpose flour.(metal scraping)Two cups of milk.Whoop, I'm using whole milk.Six tablespoons of melted butter.Two teaspoons of vanilla.I'm gonna be crazy andactually measure my vanilla.I never measure itbecause I just go whoop.One.Two.(Exhales) I love vanilla.I remember tasting it asa kid and just being like,(imitating gagging) What is that?It's smells so deliciousbut taste like garbage?Now we're just gonna whiz it all up.(blender whirring)I love this variable speed thing,I mean oh my gosh.(mellow music)I see some flower sticking to the sides.One quarter cups of shredded coconutand I'm using the sweetened kind.Ah, coconut sho good.One and a quarter, justgive that a little pulse.(blender whirring)So that's it.Now I'm gonna spray a pie dish.You want a nice deep one.(can spraying)You can also just butter that.Here we go.(mix pouring)Whoa, that's full.Oo boy.Now we're gonna pop thisinto a 350 degree ovenand cook it for 55 minutes to an houruntil the center is setbut still a little jiggly.You can test it with a toothpickif it comes out clean it is readyand then we're gonna allow it to cool.You can serve it warm or atroom temperature or cold.So I will come back whenthis is cooked and cooland we shall see if itcreates its own crust.I mean how can it,we just mixed it in a blender?Grated coconut is gonna be really light.So I think that's gonna make the top layerbut the bottom layer, that'swhat I'm really curious about.Like how is this crust gonna happen.Let's see.All right, I'll see you in an hour or so.Okay pie, do not spill in my oven.Okay, don't do it.Resist the urge.(dramatic music)All righty my lovelies I'm back.I baked my pie and boy did it ever puff upin the oven.It went pssh threw andactually lost a part of it.This little piece went wee.So if you make this recipeuse a slightly largerpie plate.Mine is a nine-inch orjust don't use the fullamount of batter, maybemake a mini pie as well.Having said that I'm still very pleasedwith how this turned outand it couldn't have beeneasier to make.Now, for the moment of truth.Let us see if this actuallydid it's impossible featof separating into three separate layers.Let's find out.This looks so beautiful.(knife cutting)So this has been coolingnow for about an hour.So it's about at room temperature.Now, look at that.That's amazing.So you've got the coconut on topThis kind of golden crust on top.You've got this middle andit actually formed a crust.Look at that.That's a crust.It makes its own crust.That is so stinking cool.It actually makes its owndistinctive layer for crust.I thought oh, yeah,it'll probably separatebut that really is a separation.There is a crust there, amazing.And then you've gotthis kinda golden layerof coconut on top.Okay, wow, that was great.Okay, now let's go aheadand taste this pie.There's the crust.Amazing, it made its own crust!Gosh, that's so cool.I love science.All righty, itadakimasu.That's pretty great.If you like coconut, thenyou will love this desert.It's buttery, it's rich.It's still at room temperature.So its eggy.If you don't like eggy custards or tarts,I would say have this cold.That often happens with tarts and piesthat have eggs in them.For example, if you make a pumpkin pie,it can have an eggy flavorif you eat it at room temperature.But once you have it completely cooled,you don't taste it any longer.I happen to like that.It tastes rich and delicious to me.I like the textures thatare going on in this pie.You've got the desiccated coconut on top.That gives it a little bit of texture.You've got that create coconuty flavor.You've got that reallystrong buttery flavor.Mm-hm.The inside of the pie isvery soft and custardy,but then you've got thestrands of coconut in there,which give it a little bit of bite.So while this pie didindeed form its own crust,it does not have the texture of say,the crust of an apple pie or pumpkin pie.It's not short, flaky, crumbly or dry.It's a little bit more pancakey.It definitely does form a crust.And it is distinctive from the filling,but it's got a different texture.Mm-hm.The edges of the coconut getnice and crispy and toasty,really great texture and flavor.Delicious, great little pie.And so, so easy to make.So there you have it, the impossible piethat is indeed quite possible.If you love coconut youmust try this
