Welcome to another episode of Weight Loss Wednesdays! I'm Vanessa The Crafty Gemini, and I'm excited to share with you some pictures and information on the lunches I eat here on a daily basis. As a busy mom of two preschoolers, I don't always have the luxury of sitting down for a full-blown meal in the middle of the day. We live on a little farm, where we're usually jet-setting off to run errands, play outside, or doing stuff here on the farm. This means that my lunchtime is often spent scrambling around and grabbing something quick and easy. Fortunately, I've learned some clever ways to make mealtime work for me, even when time is of the essence.
One of my favorite strategies for saving time during the day is cooking more than what we need. This way, I can have leftovers for the next day – not just for myself, but also for my husband to take to work in one of his lunch Bots. It's a win-win! By cooking extra, I can enjoy a delicious meal while also ensuring that there's something left over for later. Plus, it's always nice to have some extras on hand, just in case.
When it comes to my typical lunches, leftovers are definitely a staple. Whatever we had for dinner the night before, I'll quickly warm it through for lunch the next day. Sometimes, if it's enough, we'll all eat that together as a family – but other times, I might prepare something special just for myself. One of my favorite quick meals is a can of sardines paired with some steamed vegetables. It's a simple but satisfying combination that doesn't take more than five or seven minutes to prepare. To make it even quicker, I buy frozen organic vegetables and simply steam them through in a little pot with some water, adding a pat of butter and a squeeze of lemon juice for extra flavor.
Another quick meal I like to whip up is chicken soup. As you might know, we have chickens on the farm – I raise some for eggs, while others are used for meat. Whenever possible, I try to make my own chicken broth or bone stock from scratch, which I then use to make a big pot of soup that can be frozen or canned for later use. This way, I can enjoy a delicious and comforting meal whenever I need it – and it's also super convenient because I know exactly what ingredients went into making it.

I definitely will do it for dinner for when my husband comes home but for lunch it's often times going to be leftovers from the night before this is something that I always try to do and that is to cook more than what we need so we have leftovers for the next day not just for me to eat for lunch but also for my husband to take to work um in one of his lunch Bots right so I wanted to share with you all a couple of the lunches one of course is going to be leftovers so whatever we had for dinner the night before I'll quickly warm it through the next day and sometimes if it's enough we'll all eat that otherwise I will usually prepare the kids something for themselves and then make myself a little quick something on the side another quick meal that I like to prepare because it doesn't take sharing with you here is some chicken soup now as you all know we have chickens on the farm I do raise some of them for eggs and we raise other ones of them for meat so I will usually can my own chicken broth bone stock and things like that so from the chickens that we raise for meat I will usually make a huge pot of chicken soup and either freeze it can it or just keep a big pot in the fridge for a couple days where I can use it to make a few different meals with okay and so those are just the few different lunch options that I wanted to share with you all if you enjoyed this video
