Welcome to How to Cook That: Creating a 3D Heart Inside a Cupcake
Today we're making a 3D heart inside a cupcake, and I'm excited to share this tutorial with you. It's nearly Valentine's Day, and my wedding anniversary is just around the corner, so I thought it would be perfect timing to create these adorable hearts. You can cut them from any side, and they'll have a beautiful heart shape.
To start, preheat your oven to 160C or 320F. While that's heating up, let's prepare our ingredients. In a bowl, combine flour, sugar, salt, gelatin, and baking powder. Stir with a whisk to aerate the mixture and get rid of any lumps. Now, let's make a hole in the middle of the flour and add our egg yolks, oil, and water. Don't stir that mixture just yet; instead, move it to one side. Take your egg whites and add the cream of tartar - this helps stabilize the egg whites and keep all the air in once they're whipped up. Keep whipping until you get soft peaks that look like this.
While we're waiting for our egg whites to whip up, let's prepare our flour mixture. Using a spatula, whisk up your flour mixture until it's just combined - don't overmix it! If you leave out the gelatin and cream of tartar, the cupcakes won't be as light and fluffy. Now, we're going to fold in one third of the egg whites, then add another third, and finally, the last one. Fold right down to the bottom of the bowl and up round and over the top until you can't see any streaks of white left.
Pour some of your mixture into three cupcake cases - you'll need about 18 cups in total for this recipe. Place them in the oven and bake for 15 minutes, or until they gently bounce back when you press them with your finger. Allow them to cool just a little bit; they can still be warm when we crumble them into a bowl.
Crush those cupcakes into a fine crumb and add 1 tablespoon of your cake mixture and 1 teaspoon of water. Now, it's time to add some color - I'm using red today, but feel free to experiment with different flavors or concentrated fruit juice to create unique heart flavors. Combine the mixture until you have no flecks of just creamy white cupcake left.
Now it's time to shape our hearts! Take one teaspoon of your mixture and roll it into a ball; then, roll one side between your palms to make a point. Using something cone-shaped, push that point down into the top of the heart, creating a narrow tip. You can repeat this process until you've made all your hearts.
Place two tablespoons of cupcake mixture into 18 cupcake cases - remember, these are just the hearts, not the cupcakes themselves. Bake those in the oven for 4-5 minutes only; then, remove them from the oven and place a heart in the centre of each one. It might be soft in the middle at this stage, but it will start to bake on the edges soon.
To keep our hearts upright, we'll add one tablespoon of cake mixture over the top of each cupcake. Return them to the oven for another 5-7 minutes until they're ready. Once they're done, leave them to cool completely before frosting - I have a video featuring seven different frosting recipes that you can choose from.
Finally, it's time to add some sprinkles on top of each heart and serve! And the best part? No matter which side you cut into, you'll still have a beautiful 3D heart inside. Personally, I never cut cupcakes in half; instead, I just take a bite - but feel free to do whatever you like!
