**Preparing the Perfect Pepper Steak**
We're going to be cooking up these bones like I said for some real good eating all right just get it out of there I'm using Old Hickory today but you might want to use a boning knife man it looks good enough to eat already if you know what I mean you just throw this on the grill away it is a little bit of salt and pepper you're good to go. But we're making a pepper steak here today and here I've got a uh pepper paste uh it goes by different names but uh essentially what it is is a hot red peppers in here it may have some garlic in there and some other flavorings look for it in your grocery you can get it most anywhere.
We're going to want to be marinating this for a couple hours W now I'm going to marinate these here in some uh plastic wrap here and like I said I'm going to do it for about 2 hours uh you don't want to go more than 2 hours because we want to uh create some layers of flavor here and we don't want to uh marinate some of that good beefy flavor inside this strip steak right here so we're going to do it for about two hours and uh it'll be all you need to do on this.
If you got a lesser cut of beef uh that can use some serious flavor and you might want to marinate this overnight now we're going to make a uh jeo for this it will be an Asian style J and we'll use it for a dipping sauce and a mopping sauce and it's real easy to put together now here I have about 1/2 cup of soy sauce to that I'm going to add about one tblspoon of sesame oil and here I've got about uh 1 tbspoon of lemon juice going in and here I've got some chopped onion some chopped green onion then we add going to add about one teaspoon spoon of honey then give it a good mix now again we're going to save some for a dipping sauce and use the rest for the moppin sauce all right the Asian Jew has been made.
We'll clear off the table through the miracle of time these uh steaks have been marinated so it's been about 2 hours and what I've also done here in order to make slicing up these steaks for uh sticks is I've put it in the freezer for about an hour I just stiffen up this meat here and uh it makes it easy for cutting real thin slices you probably know all about that uh if you get a chance you want to throw it in the freezer we just make uh slicing these up a whole lot easier all right now just take a look at that now you can see in 2 hours how the uh Pepper marinade is uh he gotten into about 1/8 in into this piece of beef steak here and that's about what you want nice layer of flavor there.
Here's the other one oh man oh yeah take a look at that see all that marbling in there this is why if you can you want to use a strip steak like this plenty of beef flavor real tender oh yeah these are going to be real good on some skewers these here are about uh maybe foot long bamboo uh skewers you just want to put that beef on there you know all about doing this and we'll show some of the newbies man for the first time if they've never seen do it this before this is how you do it just thread that steak right on these skewers now this is great eating for your tailgating uh or just uh an afternoon pic could do this all beforehand all right we've got these staks on the sticks here and we're going to place them directly over medium hot coals and it's only going to take about a minute and a half maybe 2 minutes you just want to uh sear them up.
