I think we got all our supplies.Let's make some Jiggly Japanese Cheesecake!First thing I have to do is prep the pan.So I'm just tracing around it onto some parchment papercuz I realize that's what it was that he was putting in the bottom of the pan.You also need a strip to go around the sides,but it doesn't really want to stay where it's supposed to so I'm just gonna use a little persuasionAlso, since this is a springform pan, we need to double line it with some foil, so no leakage happens.This is very important.I've had leakage before with these things and it's not a pretty sightAnd-- And then yeah!It just goes on top of a pan that has some paper towels on top of it, like so.Totally not a pain in the ass at all.Okay, now we actually have to start making the cheesecake.Whoo.First, I have to measure out all of my ingredients.Starting with the cream cheese and the butterwhich is going into a double boiler with the milk that I just measured out as well.Apparently, this is supposed to melt down to a point where it's actually smooth.BUT...
