A Cozy Dinner Meeting with BFFs Hyacinth and Mallory

My BFF hyacinth and her soon-to-be daughter-in-law Mallory are on their way to the ranch for a meeting, but it's really just an excuse for us to get together, eat shrimp tacos, and drink a little wine. I always love it when they come over to the ranch to go over the top of the shrimp tacos. Today, I'm gonna throw together a really simple slaw using regular cabbage and purple cabbage, with a dressing that's equally simple – starting with half a cup of mayonnaise and some milk as my creamy base.

I like to add a little sweetness to the dressing by adding sugar vinegar and cayenne pepper. Hyacinth and Mallory have been going to market for me, scouting out what's available at the Mercantil opening – I was a bit busy, so they stepped in and were super helpful. They separate the wheat from the chaff and show me everything they found, and we make our selections together. The dressing goes over the cabbage perfectly, with just the right amount of dressing. Now, I just need to add a little salt and pepper.

For my slaw, I'll also use half a fresh jalapeno and a ton of cilantro – then I just need to toss it up to make sure all the cabbage is coated. Next, I'll move on to the shrimp. I've got a skillet heating some vegetable oil in, and now I'll cook them straight away. Shrimp take almost no time to cook, even when they're big pieces of chicken can take 15-20 minutes to cook all the way through – we're just talking about a couple of minutes for these small size shrimp.

The great thing about cooking with 16-minute meals is that it makes meal prep easy and quick. I wonder what other delicious dishes we'll have this time. I know the Pioneer Woman always keeps me guessing by not telling me what's next, but I think she likes to surprise us that way – it's an adventure! My shrimp are cooking away, so it's a good time to sprinkle on some cumin and add a little red enchilada sauce for extra flavor.

I've also got some Mexican red sauce in a can that's particularly tasty. Now, this skillet is so hot the sauce is going to start bubbling up – I just want to drop in a little pad of butter to add more richness, loveliness, and awesomeness to my dish. So, I'll turn down the heat to simmer, keeping everything warm for our guests. While we wait, let's get some tortillas warmed up by wrapping them in a paper towel for about 40 seconds – now, are you hungry? I know I am!
