CU we going to be cooking up steaks but the first thing here we want to uh we want to make the gravy need some veggies like you know this garlic here the onion the carrot couple stalks of celery and you're just going to rough cut them up cuz we're uh we're going to add a lot of flavor to our gravy with a couple of these veggies of course here uh this is what it's all about we've got some inch and a half cut New York strip steaks these are all Lingus steaks and cut up for special by our butcher you want to get a good quality steak especially if you're cting in the winter like this now I really don't need to take time to show you how to cut up your own veggies you know all about that but uh oh what the heck good enough all right we've got uh most of our veggies cut up here I'm chopping up two or three cloves of garlic and um let's get this gravy going now I have a 4 quart of black Iron saucepan there and uh I'd throwing about a/4 cup of oil good cooking oil in there your favorite veggie oil is we're going to we're going to sauté these up and this is going to take a while because uh we want to caramelize all these veggies we want to get all that Sugar out of there and get it kind of brown you know what I'm saying so this is going to take a few minutes you got to get yourself a good hot fire like that man I know the neighbors are starting to smell this already man they'll be on their way over and here I've got a couple cloves of garlic we'll throw them in of course we don't really want to burn the garlic but we're going to caramelize all this just like I said now the veggies have been cooked down and I'm going to pull them out of the remaining oil cuz we're going to make ourselves a gravy or a root make sure you get all those veggies in there all right let's make a base of this gravy and like I said we're making a rue here and of course uh we're going to use some butter and I've got about 4 tablespoons of sweet butter there and we're going to add it to the remaining oil in that uh pan melt it down and here I've got some flour and uh with the amount of butter and oil we're using there we're probably going to use about 4 tablespoons of flour here and we'll uh we'll pour about 1 tbspoon of time in there and just mix it into that melt butter and oil oh yeah you just just keep doing that cuz this is going to thicken your gravy real good you got to be careful now you don't want to overcook this you want to get it just slightly Brown all right that R is done and here's the magic of this gravy I'm going to put about maybe a third or even a half cup of good whiskey you want to be careful you don't get a flare up there you stay away from the fire pour that in there give it a good mix now you don't want to overdo Your Whiskey you want to save some for the pitm now to that I'm going to add about two cups of beef stock and this a good hardy beef stock it just makes that gravy taste real good hey take a look at that huh it's going to cook down for about 20 minutes to a half hour and it'll get nice and thick just got to be patient and here of course we're throwing the rest of those veggies right back in there man the vegetarians going to be happy about this recipe now a little salt pepper to taste maybe a teaspoon of salt and at least a teaspoon of uh fresh ground black pepper corn even more if you like pepper in your gravy yeah all right maybe 15 minutes has gone by we've got a nice simmer going on here the gravy is starting to thicken up a bit it's time to get these steaks on the grill now you uh you can use your favorite flavorings you want on your steak at least use some good salt and pepper this here is just a blend of salt pepper garlic flake I'm going to take them put them directly over the hot coals cuz we want to sear these here a few minutes each side oh yeah take a look at that keep stirring that gravy all right like I said you just want to sear these steaks until you get a nice layer of flavor on the top and uh man you know what that's all about give him a flip oh yeah now those steaks have been seared and they're rare on the inside so we're going to move them indirect now on this Grill put the cover on and depending how thick your steaks are how much meat you got there depend how long it takes now we like our steaks medium rare especially a good quality Angus strip steak like this you can cook it the way you want I say it's time to pull them off the grill oh baby right gravy's nice and thick let these steaks rest for a few minutes all right it's time to Plate it up take some of this whiskey
