The Debate Over America's Favorite Food: A Conversation with Double D's and Josh Allen
When it comes to America's favorite food, there's no shortage of opinions. Some swear by hot dogs and apple pie, while others claim burgers are the clear winner. But what about chicken wings? Can they truly be considered one of the country's top culinary delights?
For many, the answer is a resounding yes. As evidenced by the enthusiasm of Double D, an ex-diving coach from Laramie, Wyoming, who's been perfecting his wing game for years. "I don't have too much time pass without eating them," he says of his favorite chicken wings. "Wing special barbecue it's the detail that goes into the recipes – it's down to every little ingredient that I pick." Double D's passion for chicken wings is matched only by his dedication to using only the finest ingredients, from kosher salt and celery seed to habaneros and blue cheese crumbles.
But what truly sets Double D apart is his connection to Josh Allen, former University of Wyoming quarterback turned Buffalo Bills quarterback. As it turns out, Josh was a regular at Double D's wing joint, and even competed in the National Buffalo Wing Festival with some impressive results. "Josh became the quarterback for the Buffalo Bills," Double D explains, "and that's when I finally got the chance to compete. And let me tell you, he was like doin' his thing out there on the field – just like he does when he's eatin' my wings." According to Double D, Josh Allen is a huge fan of his "Spicy Blue 17" sauce, which has become a staple at the restaurant.
The secret to this beloved sauce? A combination of mayonnaise, sour cream, blue cheese crumbles, and – of course – habaneros. But it's not just about the ingredients; the preparation process is equally important. "You gotta let that blue cheese sit and steep for about 24 hours," Double D explains. "It's like a little wake-up call for your taste buds." And then there's the dry rub, which features a blend of dried habaneros, chili powder, cayenne pepper, and kosher salts.
When it comes to cooking the wings themselves, Double D insists on using a precise eight-minute frying time. "You want them crispy on the outside, juicy on the inside – that's the only way to do it," he says with conviction. And when you take your first bite of one of his signature chicken wings, all the hard work and dedication become clear. The flavors meld together in perfect harmony, a true masterclass in wing-craft.
"I'm not gonna lie, Josh I agree with you man – real deal Spicy Blue 17," Double D says with a grin. "It's creamy, it's got some heat – that blue cheese and hot sauce make them a little bit tangy." For Double D, the key to creating an unforgettable culinary experience is all about balance. "You want to get both those flavors – acid and funk of blue cheese, creaminess but also spice and heat," he explains.
