Making a Carrot Halwa Carrot Cake: A Family Tradition
I am making a carrot halwa carrot cake, my grandmom would only make in the wintertime. She would make a traditional dessert called gajar halwa, which is a pudding made with grated carrots, milk, and spices. I want to put my own spin on this dessert by creating a carrot cake that incorporates the flavors of both desserts.
To start, I peel and grate some carrots, which will be the base of my cake. I mix together liquid ingredients separately, including eggs, granulated sugar, brown sugar, oil, and milk. Next, I combine dry ingredients in a stand mixer, adding chai masala mix to flour, baking powder, and salt. To take away the smell and taste of raw carrots, she would add some raisins to the mixture so they could rehydrate and become plump during cooking.
To create my carrot cake, I also want to incorporate some roasted nuts, which will add texture and flavor to the dessert. I melt some ghee in a saute pan and roast pistachios, cashews, and almonds until they are golden brown. The final layer is the other half of the cake, which I ice with whipped cream.
To finish the dessert, I sprinkle some pistachio dust on top and add beautiful flowers made from edible cold sheets. Because I love my bling, I also put some edible decorations on the cake to make it truly special. And so, after all this work, my carrot halwa carrot cake is finally complete!
