them it's something that comes from my heart I just can't explain it Emmanuela is my partner in the kitchen he brings my creativity to life the most important thing for me for my ingredients they should be fresh in the right season and especially local sicy is a very generous land it gives everything the place where I get my cheese they can guarantee me best catch cheese which I use in many dishes I respect the season of Every fishan we're right now in B sofa which we uh always buy our fish I would never buy a fish if it's not fresh and you can tell by the way the fish stands on your hand it stands straight that's the secret okay okay I went to the farm for the eggs these eggs they're totally different from other eggs that they sell at the supermarket I know how the chickens are
