Today on the Stay-at-Home Chef, I'm showing you a fun and tasty April Fool's dinner that will leave your family guessing. Nothing is quite as it seems in this meal, and we're going to explore the art of cooking behind this clever trick.
To start, we'll begin with those meatloaf cupcakes. You can use any meatloaf recipe you want for this one; I've included links to my favorite recipes in the video description. Make sure you're using a lean ground beef, as this will help prevent shrinkage as it cooks and result in more substantial cupcakes. You'll form your meatloaf into balls and place them in the muffin hole - think of it like a giant meatball, really. When they come out of the oven, bake at 350°F for 35 to 40 minutes. Next, you'll need some mashed potatoes that will fit perfectly into piping bags like normal cupcakes. You can use food coloring to make them fun colors and divide them up in different ways - it's all about having fun with this part.
Now that we have our meatloaf cupcakes ready to go, let's work on those French fries. Heat about an inch of vegetable oil in a pan until it reaches 350°F. Peel two Granny Smith apples and cut them into the shape of French fries. Pour 1/4 cup of corn starch into a bowl and lightly dust each of your French fries with the corn starch before frying them in batches for 2 to 3 minutes, or until they're golden brown. You can roll them in cinnamon sugar for an extra sweet treat, but I like them just as they are - even put them in a French Fry Basket to keep the illusion going.
The final part of our April Fool's dinner is what we'll call "main course SL dessert," which sounds suspiciously like a meatloaf with fries. But trust me when I say that it's a game-changer. You'll need six cups of Cocoa Krispies in a gallon Ziploc bag and smash them up into little bits to create this mixture. It looks almost like ground beef, but don't let that fool you - it's actually just Cocoa Krispies! Add another cup of the whole Crispies to give it some texture, then melt 2 tablespoons of butter in a large saucepan and stir in 3 tbsp of cocoa powder. Once that marshmallow is nice and smooth, pour it into your mixture and shape it into a meatloaf on a lightly greased pan.
Now, here's the important part: let this "meatloaf" cool and harden completely - about 30 minutes should do the trick. While that's cooling, mix together 1/4 cup of seedless red raspberry jam with 2 tablespoons of cocoa powder to create a delicious sauce. Spread it on top of your so-called meatloaf, then assemble everything together for an April Fool's dinner where nothing is quite as it seems.

in 10 oz of mini marshmallows and let it melt all over low heat once that marshmallow is nice and smooth pour it in with your Cocoa Krispies I'm going to use lightly greased hands to free reform this into the shape of a meatloaf on a lightly greased pan now don't try and cut into this meatloaf anytime soon you need it to cool and Harden completely which takes about 30 minutes now what's any great
