relish corn dog --that's not much of astretch, but get this:it is served with a side of peanut butter!I've tried lots of peanutbutter taste tests in the past.I'll put links down below.Lots of historical combinations,including peanut butter with onion,peanut butter with pickle.And I've concluded that theyactually taste pretty decent,but I've never had itwith a corn dog before.And I've never had a corndog like this before,because this corn dogactually is kind of similarto a turducken.You've got a hollowed out whole picklethat has the hotdog inside.It is then battered and then rolledinto panko breadcrumbsand then deep fried.So then when you cut it in cross section,you get this kind of planetary-likecross section of the earth,where you've got the hotdog as the coreand the pickle as the mantleand the panko crust breadcrumbas the crust.I mean, it's quite the visual.So, let's go ahead and make this.So the first thing we needto do is have some pickles.(Emmy vocalizing)(Emmy laughs)Look at this jar of pickles!This jar of pickles is enormous.I've never purchased such alarge jar of pickles before.But you want large pickles for thisbecause we need to core it out, after all.(light jazz music)I'm gonna try to get a nice girthy onebecause we need to hollow it out, right?So we want one that's thick.No, not quite wide enough.See, this is deceiving.The brine kind of magnifies them.So they're actually notas big as they look.(Emmy chuckles)Oh, that's a good one.And now we need to core them out --I'm using an apple corer.So I'm just gonna gently twist.And there is the core.Ta ta ta ta.(Emmy chuckling)There we have it, a hollowed out pickle.So imagine me yesterday,I was at the storeand I was holding this apple corernext to all of the hotdogs in the storeto see which hot dog would accommodatethe diameter of this core.Yes, I am that person.So if you ever see that personaround, stop by, say hi.Say, \"Emmy, what's your next project?\"Then we're just gonna do this.It's like biology, right?Insert our hot dog right into the pickle.And I'm going to trim thisso that it's not too long.Now I've got some really fat skewers.These are actually skewersfor dipping caramel apples.See how fat they are?Carefully impale the hot dog.Boop.Nice and straight.And then return that to the corn dog.This is a little bit of a loose fit.And I'm concerned when Idip it, it might move on me.So I'm gonna take a toothpickand secure it at the top here.And then I'll snip that part off.Just let your peeps knowthat there's a toothpickin there when you serve this to them.Alrighty, my lovelies,now we're going to prepare the batter.I've got three cups ofall-purpose flour in this bowl;two thirds of a cup of sugar;two teaspoons of kosher salt;and three teaspoons of baking powder.And one third of a cup of corn meal.This, incidentally, is the samecorn dog recipe that I usedin my potato hotdog.If you haven't seen that,I'll put a link downin the description box.It is a delicious corn dogthat is covered withcrinkle cut French fries.It was inspired by some Koreanstreet food videos I saw.Amazing.And this batter recipe isadapted from ChefSteps.So to one and half cups of milk,I'm going to add three eggs.Boop!We're gonna mix that up.(whisk clanking)We're going to incorporate this into this.Next, I'm gonna transfer someof this batter into this glassand that will make dipping a lot easier.So we have our dry pickle dog.Get that bottom coated, right?We want that dog and the pickleto be completely disguised.Lift it out slowly.(Emmy chuckles)Roll it into our panko.We're gonna place our dog right in there.(Emmy exclaims)And we're just gonna frythis up until it's golden.I'm choosing to fry thisat a lower temperature,about 360 degrees, becausethis is a very thick corn dogand we want to make surethat it's heated all the waythrough without burning the outside.Recently, I've beenusing a probe thermometerto tell me the temperature ofmy fat when I'm deep frying.And I love it!It's so great.I don't have to guess.I don't have to constantly belooking at the thermometer.It tells me when it's up to temp.So good.I think this corn dog is just about done.Look at that.(Emmy chuckles)Now I'm gonna drain it onto a rackthat's lined with some paper towel.(orchestral music)And look at my pickle corn dog.Isn't it beautiful?Look!
