The Art of Creating a Fortune Cookie Cake
As I began to work on my fortune cookie cake, I couldn't help but feel a mix of emotions. The task at hand was daunting, and I was both excited and intimidated by the prospect of creating a intricate design. I started by portioning out the fondant, carefully cutting it into manageable pieces that would fit together seamlessly. This was crucial, as I didn't want any gaps or unevenness in my final product.
The cutter was a game-changer in this process, allowing me to make precise cuts without digging into the entire piece of fondant. Instead, I could create individual letters and shapes with ease, which made the overall design feel more achievable. With the letters cut out, it was time to move on to the most daunting part of the project: covering the cake.
I measured carefully to determine how long the band would need to be and the height required for the design. The top portion would be the trickiest, as I needed to cover the valley in a smooth, even layer. I chose a fortune cookie-colored fondant that I had previously tested, which was always hit-or-miss in real life but looked perfect on camera.
As I began to work on the cake, I found myself getting frustrated with my progress. The fondant wasn't sticking well, and I was worried about tearing it off the cake. But after a few moments of tension, I took a step back and reassessed the situation. I decided to cut away some excess fondant to prevent it from tearing and then chilled it for a bit before attempting to smooth out the surface.
Just as I thought I had everything under control, disaster struck. The knife slipped, and I accidentally dug into the cake slightly. This presented a new challenge, as I needed to recreate the line that was created by cutting with a cutter. To achieve this effect, I carefully cut the font with my knife on an angle, hoping that it would mimic the look of the original.
As I continued working, I found myself needing to cover large areas and then carve intricate details into smaller sections. This was where the gum paste came in – a sturdier material that could be molded and shaped as needed. I used it to create the letters that would spell out my fortune, taking care to smooth out any imperfections with a powder puff.

all of the caramelization at the same time oh my God I dropped the fortune cookie oh no I'm going to read the fortune I think it's going to say you're clumsy good things come in invisible packages have you ever gotten anything good in an invisible package ooh that one's pretty I'll treat you better than I treated the last one and now I've got to do the exact same thing one more time for part two don't ask me about the sounds oning why am I so out of breath it's just King all right so here we go what did I get myself into you ever ask yourself those questions I do so what I need to do is sort of map out the opening cuz it's open wow this is going to be harder than I thought it was going to I just realized next year is year of the snake and I've already caked a snake do you know what year you are shuchi I have more cake is that how I would do it how do I measure the curve trying to see if it's curved like that oh it kind of is do you see that so that means if I cut this same curve into here it should butt up against it I'm going to just go for it you see that now but it still has to follow the same curve that's I'm really freaking myself out right now and now I'm going to do this side so I have not one but two little squeezes ready cuz this is a lot of cake and it's very tender right now but it's going to be okay I started filling this and stacking this cake which I just told you but my mic was off so welcome back I'm filling and stacking with Italian mering buttercream I definitely have to put this cake in the fridge before I start carving again okay I'm very excited the cake held together the buttercream is firm as you can see so now I get to carve I said I was excited but I'm still scared but it's okay buttercream where are you so I'm going to make sure to use the crummy buttercream from the Crum coat as well I'm using a offset spatula in Reverse is a good crumb coat I like it okay time to chill here we go icing I got my invention ready to the fridge now I'm going to roll out some uh gumpaste blue is actually fondant but I added a little CMC so it's dip and I'm rolling this out to cut the letters on the fortune now all the fortunes I have that I've saved are all blue writing but I want to put some red in since it's the color of Chinese New Year okay fridge since the fortune cookie the seam where it comes together is not well it's pretty much never perfect there's always an opening I don't want to see white buttercream through that opening so what I'm going to do is roll out a bit of black fondant just to create the illusion of darkness and I'm going to make sure that the long the long edges are as thin as possible just to help me blend it into the buttercream yeah I think that's high up enough right all right so now I'm going to ice along the edge of this band it needs to be like one smooth surface so that when I cover it with the fortune cookie colored fondant we don't see this Edge through that fondant so now that the cake is chilling I'm going to use this time to cut my letters for the fortune so I have these Cutters they're all on a strip and what I like to do is just cut portions uh that will fit this way the cutter is not digging into the whole piece of fondant as I'm cutting letters now it's time for the part I've been dreading um it's equal of Parts dread and excitement I shouldn't say dread so I'm going to measure from one tip to the other to see how long the band defon in has to be and then the height so essentially I'm going to try and cover the bottom half cut a seam and and then the harder part will be covering the top and down in the valley so I have my fortune cookie colored fondant which we held up to camera you wouldn't believe how many times I make a color and it looks right in real life but it looks off on camera so we always do a test how's it look all right this is good I'm not ready I'm never going to be ready so okay I'm kind of throwing because got to pick this up oh oh come on come on come on come on stick to the cake come on I can put wait let me think I'm going to cut away some of the excess because I don't want it to tear off the fondant and then I'll go back after I chill it and cut a clean it seems uhoh I actually dug into the cake a little so now oh Bo oh boy okay you see how there's like a little bit of a line cuz these are cut with like a cutter and then folded I want wasn't as fun as it looked yeah okay so I have to keep in mind that I have to cover this whole cake and then have enough to get down in here this is the tricky part so so I can cut a slip from oh I really hope this is one and done oh boy helpful if fondant could act like paper and to be smoother got to cut this the good news is it doesn't have to match exactly CU sometimes there's a gap sometimes there's a smaller Gap so it doesn't have to match but I still want it to look good come on the fortune cookie has like Jagged edges you see I don't know if is that two or is that good so I feel like as I go on if I take some of these bits out this is great it won't look as uniform it's time to paint I need bowls now this is interesting cuz I don't really want to change the color but the cookie does have a bit of a Sheen and ivory gel color is quite dark I have a bit of white cuz I think that will help and I have a little bit of yellow not sure if that's going to play apart first I'm mixing the ivory let's see this is just Ivory oh is that it how's that looking so then I mean the other thing to do is dilute it more so let's see now if it looks yellow I'm not adding yellow that's for sure and then I can try a bit with white just to see how that plays see to my eye the middle one looks right oh that is so weird yeah totally yep cuz the other thing is it's going to dry a bit I'm going to do it do you think that the more giant the cookie the better the for all right fridge oh I just touched it did you see what I just did WOW every good fortune cookie needs a fortune which I'm going to roll out of gumpaste gumpaste is much sturdier than paon it's harder to roll out and dries fast which is why it's good for things like this it can also take the shape of anything you want it to time to lay on my letters this is always very very nerve-wracking future with how long it is so it's about 16 in 8 in being the center which means the f is the center so I like to start in the center and work my way out now I'm going to add these letters to my gum paste I'm going to flip them over gently brush on a little bit of water if you put on too much water it might squeeze out from under the letters and stain the gumpaste so be careful so now now I've got to quickly cut this just to create some texture cracking don't do that I got to keep this lower cuz it's cracking okay I'm going to just put this aside I feel like my paint looks streaky so I'm just using a powder puff um to smooth out some of those lines Happy Chinese New Year leave a comment below and let me know what
