Welcome to Bone Appetit Kitchen Lab, where we're talking sweets with Matt Lewis of Baked. Today, we're going to show you a super simple way to impress your guests with a pumpkin creme brulee.
First, let's start by cutting our pumpkins and poaching them up right. Cut the tops off, scoop out as much as you possibly can, and keep the tops for each one. I'm a big pumpkin guy, but only for like 30 days, and I'm still figuring out my pumpkin stance. So, we have some lightly simmering water, and we're going to poach them until they're tender. It could be as long as 15 minutes; whatever makes you comfortable.
While our pumpkins are poaching, let's build this custard. This is a no-bake pumpkin creme brulee, and it's like the easiest Creme Brulee you can make ever. We've got our cloves, all spice, and cinnamon, but we decided to add a little turmeric, which I think is very on the moment and of the season right now. So, we want to just toast it till it's aromatic, then we can add our pumpkin in. You want to grade a little ginger for you; I'll great a little ginger for you. A little pumpkin puree never hurt nobody, just a little ginger and some milk. Oh, that smells good! Turmeric ginger this is like a healing pumpkin Creme Brulee. This is like ultimate fall.
While we're heating that up, let's do these dry ingredients. I'm just putting the sugars, flowing egg yolks together. Just feeling them because they're kind of boiling away; still need a little time right? We want them relatively tender. How's your filling looking? I'll give it a hit of vanilla. Ooh, yeah! Nice! Crum Bre feeling that turmeric. I know the turmeric is the Special Sauce.
Now we temper this. This is where people start scrambling; I don't want scrambled pumpkin crumber. I want smooth so you're going to turn this down a little bit and you're just going to gently add some of this warm mixture about a third, and look whisk all the time. It's a teamwork thing right? The whole idea is we're not scrambling; we're not scrambling have we scrambled yet? No, we're good. Then we add it back into here yeah yeah. We're going off heat now, and then you just simmer this for about 7 minutes. Guess what? Done that! Is that custard like that's like custard at its finest all right. I think those guys are probably ready knife through easy shocking into an ice bath. You want it to be warm and thick into the cold pumpkin. What are we looking for like nape right to coat the back of a spoon, getting there pretty close say it's pretty close so these are cool our custard is thick that's actually perfect.
So you run your finger through and don't want it to close on you want to make a canyon that's perfect delush. Now we spoon. About how long is this going to take for us to set? About 2 hours yeah fill it right to the top. You could pop them in the fridge just like so, and if it was completely cool you would just. Yeah that's it. That's pretty sexy all right but let's pop these in the fridge let them set pull them out and Brule them. Yep! It's time to Brule all sugar you Brule I'm going to do a manageable flame. I'm diving in pulling out diving in are we catching the smoke on that oh yeah, and you know this is dessert so a little extra sugar isn't going to kill anybody I'm a fan of having it teetering on the on the Burt side. You want some smoke Smoky caramel nice people come to your house you pull out these pumpkins they get all excited. Oh we're having a pumpkin no you're having a crem bre Lake pumpkin look at that you're not even looking for something with Brule you're listening for you're just like so that was good Sil smooth pumpkin I'm in love with pumpkin once again.
