Italian Chicken Stew: A Delicious and Easy Recipe to Try at Home
Hey guys, Dave here, and whether it's winter spurring summer or fall, I love stew. So, I made up some of this Italian chicken stew, and I have to say, it came out absolutely incredible - simply a must-try! Let me show you how to make this simple yet ever-so-delicious recipe.
To start, the first thing you want to do is add in about a tablespoon of olive oil to a pan over medium-high heat. Grab up about six chicken thighs and throw them into the pan. I'm using skin-on deboned chicken thighs, but you can use the chicken of your choice - it's all up to you! Now, go ahead and season these with some salt, of course, some ground black pepper, and a couple of teaspoons of Italian seasoning. This stuff is just amazing; the great thing about it is that it has just about every herb you'd ever want, plus a few hot pepper flakes for some heat.
Now, let's get these chicken thighs seared up in the pan! If you flip them over, look at how nice that sear is on this one side. What you want to do next is cook these up until they're basically cooked through - alrighty, then now it's time to add a small chopped onion and four cloves of garlic to the pan. We'll just stir and sauté this until the onions become a little bit translucent, and that garlic aroma will just fill the air - which is absolutely intoxicating! Next up, I'm going to go in with about 24 ounces of good old marinara sauce - basically a jar or can - and I like to do a little trick to get the residual from the can. Put a lid on it, shake it up with a bit of water, and then just add it back in entirely - up to you, but I'm cheap and want the most bang for my buck! Just give this a swirl and twirl around until everything comes together so nicely.
Now we're adding in some more ingredients - a medium-sized diced white potato, two stalks of chopped celery, a small chopped red bell pepper (you could use green if you prefer), and yes, I'm crazy because I'm using a cup or so of green olives. Let's add a bit more salt and another few cracks of ground black pepper, grab up the old spoon, and once again, let's stir until everything is mixed beautifully - isn't this looking like stew now? I think so! Anyway, to top things off, I'm just going to add a few green beans, layered or sprinkled over the top. Slip a lid on, reduce the heat to about medium low, and let this simmer away for about 20 minutes.
After about 20 minutes, we're done! Let's just look at this - doesn't it look absolutely fantastic? I mean, if this ain't stew, nothing is! And I just grabbed a potato here; didn't show it but stuck a fork in it, and it's done - it's fork tender, so we know our stew is definitely done. There you have it, guys - our simple, easy yet ever-so-delicious Italian chicken stew that life doesn't get any better than this! What family member or dinner guest could possibly refuse this?
