How to Make Easy Baked Chicken Fingers

Hey Lovies Welcome Back to Another Recipe Today I'm Going to Be Sharing with You a Recipe That's Really Popular in My House It's a Great Standby Great Weekday Recipe That Comes Together in Less Than an Hour I Know That My Son Will Love It and My Husband Will Love It and the Next Day It Makes Really Great Leftovers So It's My Recipe for Chicken Fingers Let's Go into the Kitchen and I'll Show You How It's Done

So, the first thing you're going to do is take two large chicken breasts and cut them into 1x3 inch strips. Once your chicken is cut up, then we're going to add about 3 tbsp of plain yogurt and then 1 teaspoon of mustard. Use any mustard you like; I'm using Dijon. A teaspoon of garlic powder, 1 teaspoon of onion powder, about a/ teaspoon of Bell's poultry seasoning, 1/ teaspoon of dried thyme, 1/ te spoon of cooster salt, and lots of freshly ground pepper. Mix everything really well and then cover and refrigerate and let it sit for at least a half an hour but not too long because then it'll change the consistency of the meat so about 45 minutes maximum.

While the meat is marinating, we can make our breadcrumbs. All you have to do is put a couple slices in a food processor and this is a great recipe for using those little scrap end pieces and then just grind it all up until you have something that looks like this. Spread the red crumbs onto a plate and season with salt and pepper and give it a good drizzle of olive oil. This will help it crisp up a little bit in the oven.

Next, we're going to cover your baking sheet with a sheet of aluminum foil and then give it a good drizzle of olive oil and spread it around evenly. Then, we're just going to take our marinated chicken and place it into the breadcrumbs and roll it around to cover and place it on your oiled baking sheet. Once the chicken is breaded and in one even layer, we're going to bake it in a preheated 400° oven for 8 to 10 minutes or until when you insert a fork it's nice and firm in the middle.

Chop up some parsley for garnish and then you can just plate your chicken fingers onto a plate and top it with some of your parsley. There you go, and here's a typical way I serve it with some quinoa and a big salad. Enjoy!
