**A Big Batch of Oxtail Beer Stew**
When it comes to cooking oxtail beer stew, there's one crucial ingredient that makes all the difference: beer. You're going to need a couple of bottles of your favorite beer for this recipe, so don't be shy about choosing a brew you love. The magic of this dish lies in its slow simmer, which breaks down the connective tissues in the oxtail and infuses it with rich, savory flavors.
**Selecting the Perfect Oxtail**
The key to a great oxtail beer stew is selecting the right cut of meat. You want to look for oxtails that have sufficient amounts of meat on them, as they'll be tender and flavorful after long hours of slow cooking. The fat content in the oxtail is also important - you want enough fat to keep the meat moist and juicy during the cooking process.
**Preparing the Oxtails**
To prepare your oxtails, start by seasoning them with a little salt and pepper. Then, heat up some Veggie oil in a pan and sear the oxtails until they're nicely browned on both sides. This step adds a smoky flavor to the stew that's essential for its success.
**Searing the Oxtails**
Take your time when searing the oxtails - you want to get a good, even crust on them. Don't rush this step, as it's what sets oxtail beer stew apart from other slow-cooked dishes. The Maillard reaction that occurs when the meat is seared brings out the natural sweetness in the beef and creates a depth of flavor that's impossible to replicate with quick cooking methods.
**Adding Aromatics**
While your oxtails are searing, take the time to chop up some onions and sauté them in Veggie oil until they're softened and translucent. This adds a bit of sweetness to the stew and helps balance out the richness of the oxtail fat.
**Assembling the Stew**
Once your oxtails are seared and your aromatics are cooked, it's time to add some beef stock to the pan. You'll want about 8 cups of stock for this recipe - feel free to adjust as needed. Pour in two bottles of beer, which will help break down the connective tissues in the oxtail and create a rich, velvety sauce.
**Adding Flavorings**
Add a few sprigs of parsley and a bay leaf to the pot for an extra boost of flavor. You can also use other herbs or spices if you prefer - just be sure not to overpower the delicate flavors of the oxtail.
**Slow Cooking the Stew**
Now it's time to let the stew do its magic. Place the pot in a slow cooker or on the stovetop over low heat and simmer for 6 hours, stirring occasionally. This will break down the connective tissues in the oxtail and infuse it with all the flavors of the beer, stock, and aromatics.
**Serving**
After 6 hours, your oxtail beer stew is ready to eat. Remove the bay leaf and parsley sprigs from the pot and season the stew with salt and pepper to taste. If you prefer a thicker sauce, you can strain it through a fine-mesh sieve before serving.
One of the best things about this recipe is its flexibility - feel free to add your own favorite ingredients or spices to make it your own. And because it's a big batch of oxtail beer stew, you'll have plenty of leftovers to enjoy throughout the week. So go ahead and give this recipe a try - your taste buds will thank you.
**Some Tips from an Experienced Pitmaster**
If you're new to cooking with oxtails or beer stews in general, here are a few tips to keep in mind:

* Don't be afraid to add more beer if you prefer a stronger flavor.
