Today we're going to make some bacon cheese dogs and stuff sausages on the barbecue. Man, that looks good! They're real easy to do, all you need is some your favorite sausage links. I'm using an Italian style, got some bacon, got some natural casings, and even got one of them skinless pound dogs there. And we've got a nice fat onion and a fresh bell pepper, course we do. We've also got some jalapeno cheese to stuff in there.

What We Want to Do First

We want to put these sausages in a shallow pan because we're going to steam them up, so we don't have one of those big fires on the grill, you know what I mean. So we do is add a little beer to the bottom of that pan. Now, while those sausages are heating up, we're gonna slice up some onion and bell pepper here. You can use any kind of vegetable you want to stuff in there, maybe scallion or Kelpie Nia.

Making the Bacon-Wrapped Dogs

Now we wanna make a shallow slice on these dogs so we can stuff and use our fingers to open them just a little bit. We're gonna stuff these dogs with some deli sliced jalapeno cheese, you can use any cheese you like, it's pretty similar to this Hal pina race right here that's pretty similar. And after we do that, we can wrap up a thin, thin cut sliced bacon around the dog, real simple and easy. You can do a bunch of these up beforehand because they'll get real popular at your next barbecue.

Using the Right Tools

Now again, you can see that shallow cut, we don't want to cut through, so we use our fingers to open them just a little bit so we can stuff some of this cheese in there. Now, if you're using natural casings, like I am, make sure not to pack them too full because they'll burst and ruin your whole batch.

Heating Up the Grill

Now that our sausages are pretty much heated up, it's about 350 degrees grill time. We're gonna slice these just slightly, looks like I did the dogs cutting right through that natural case in there. Now we can stuff some sliced green bell pepper in there course we're doing it this way so we can avoid a big fire on the grill.

Taking Care of the Grill

Now we've got our sausages ready to go and they smell great already, just take about 15 minutes or so to heat up. Just take a look at them now, start to smell real good and see that they're starting to brown up the cheese's are starting to melt it's time to pull these bad boys out of the pan put them directly over to hot coals.

Taking Them Off the Grill

Now we want to sear those dogs nice and crispy show them sausages on there right, you smell that? Smells good. Have a moment of silence here, them bad boys sizzling on the grill since these sausages and dogs are pretty much cooked all the way we just wanna brown them up good.

Getting Ready for Eating

Now it's time to eat! I've got some fresh sliced French bread, use a regular hot dog roll grinder roll. Now I'm just gonna put some diced onion on there, little bit of yellow mustard, you can use whatever condiments you like. He's the bacon-wrapped dogs so good, usually own little bit of mustard nutty do you find and good.
