**The Art of Making Thai Beef Salad at Home**

One of my favorite dishes to order at Thai restaurants is the Thai beef salad. I love the way that they have the crisp vegetables with the marinated beef and then you have that citrusy dressing all over it. It's Heavenly! Since I'm all about making restaurant quality meals at home, I would be a total jerk face if I didn't teach you how to make this one. It's actually super easy and you can make it using ingredients you can find in almost any grocery store.
**Step 1: Preparing the Beef**
First Look for the Grain in your beef. You can see the lines running through the meat, which indicates where the fibers are. To ensure that your beef is tender and easy to chew, you need to cut Against the Grain. This means cutting the meat at a 45-degree angle, perpendicular to the direction of the lines. Once you've identified the grain, cut the meat into thin slices. For this recipe, we're using about 1 lb of meat.
**Step 2: Marinating the Beef**
Transfer all the meat to a bowl and toss it together with the juice of about three lime halves. Yes, you read that right - three lime halves! Don't worry, it won't be too sour. Add two tablespoons of fish sauce, three cloves of crushed garlic, and one-half teaspoon of crushed red pepper flakes to the bowl. Mix everything together until the meat is well coated with the marinade. Cover the bowl with plastic wrap and transfer it to the fridge where you'll marinate it for 1 to 4 hours.
**Step 3: Preparing the Vegetables**
Next, we'll prep all our vegetables for the salad. We've got some sliced tomato, sliced cucumbers, chopped cilantro, very thinly sliced red onions, and some romaine lettuce. It's essential to wash your hands before starting to prepare the vegetables to prevent cross-contamination.
**Step 4: Making the Dressing**
To make our dressing, you'll need the juice from four lime halves. Yes, another lime! Combine that with three tablespoons of fish sauce, two tablespoons of soy sauce, three tablespoons of sugar, and a half teaspoon of crushed red pepper flakes in a bowl. Whisk everything together until it's smooth and well combined. Set the dressing aside for now.
**Step 5: Cooking the Meat**
To cook our meat, you want to heat a really heavy skillet over high heat. In this case, I'm using a grill pan, but you could also use just a regular skillet. Cook the meat for about 1 to 2 minutes per side, or until it's cooked through. Since we're cooking in batches, simply because I'm using the grill pan and it makes it easier, make sure to not overcrowd the pan.
**Step 6: Assembling the Salad**
Now that we've got our meat all cooked, all that's left is to put our salad together. I prefer to layer my salad so you can get a little bit of all the vegetables in every bite. Start with a bed of romaine lettuce, then add cucumbers, red onions, cilantro, and tomatoes. Then, start all over again and make another layer on top of the first one. Finally, top it all off with a little bit of the marinated beef and pour your dressing over it.
