Today on the Stay at Home Chef, I'm showing you how to make no-bake peanut butter chocolate chip cookie dough bars. These no-bake bars have three layers of deliciousness between the cookie dough, Reese's peanut butter filling, and the chocolate on top - you have yourself a decadent dessert that everyone will love.
We're going to start by lining a nine-inch baking pan with parchment paper. We're using a square pan, and I'm just going to spray the bottom with a little nonstick cooking spray. This will make the parchment paper stick to the bottom and the sides. Set that pan aside while we get our cookie dough layer ready.
I have half a cup of softened butter here in my bowl, and I'm going to add in 3/4 of a cup of brown sugar. Get that in there - we're going to cream this together using a hand mixer until it's nice and fluffy. Next, we'll mix in a quarter teaspoon of salt and one teaspoon of vanilla extract. Take your time mixing on this so it's creamy.
Now, let's alternate adding in 14 ounces of sweetened condensed milk and 2 cups of all-purpose flour. We'll take turns adding in a little bit of each at a time - first, I'll pour in a little bit of sweetened condensed milk, mix that in real quick, sprinkle in a little bit of the flour, then keep going with the sweetened condensed milk and the flour until you've used it all up. The last step on this layer is to stir in 12 ounces of mini chocolate chips. I use a scraper so you can scrape the sides and get the last of the flour that didn't get mixed in.
Once the chocolate chips are well mixed in, we can grab that 9-inch pan and put this directly into the bottom. Press this in the pan so it gets into the corners and creates a nice solid even bottom layer. Set that pan aside again, and then we can make our peanut butter layer which is super easy.
I have one and a half cups of peanut butter here in my bowl, and I'm just going to mix in half a cup of powdered sugar. Take your hand mixer with clean beaters on it and mix this in until it's creamy - super easy! I love this one because it tastes just like the inside of a Reese's Peanut Butter Cup - it's delicious.
Next, we'll spread this on top of the cookie dough layer once again. You'll just have to kind of press it out to get it in all the corners and spread it all along. We're going to finish these bars with a layer of chocolate, and all you need for that is twelve ounces of chocolate chips. I'm a milk chocolate lover, so I'm using milk chocolate - you can also use semi-sweet.
I'm going to melt this in the microwave 15 seconds at a time until it's smooth, pull it out every 15 seconds and give it a quick stir. You want to make sure that your chocolate melts without burning - then just pop it back in for another 15 seconds and keep continuing this process until the chocolate is completely melted.
Pour the melted chocolate right over the top to form the last layer of these delicious bars, spread it out, place these in the fridge for about 4 hours until they've hardened up after they're nice and hard. You can go ahead and slice and serve them - thanks for watching!
