Fresh and Delicious Summer Shrimp Corn and Avocado Dip
This is a really fresh summer dip with all fresh ingredients. We're just gonna toast the corn for a little bit in a saute pan. I'm gonna get a little oil in the pan, turn it up, let's get a little garlic. I love grating garlic because you get a lot of the juices that way. So, I'm just going to grate this garlic right over the corn and then it's all going to go into the pan. Okay, let's get this into a nice hot pan while the corn sautees a little bit, I'm gonna chop up the shrimp. Get it into bite-sized pieces, half a pound of peeled and deveined shrimp. Give that a stir, and these will cook really quickly. You can see how these guys are a little bit more done, opaque, and then this guy over here is more translucent, so he needs to be flipped. He's not done yet, a little bit of salt, I'm gonna turn the heat off, give it a mix, mix that salt in.
Let's grab a bowl, we don't want to put sour cream into this hot mixture, so we're gonna let this cool off a little bit because this is supposed to be a cool dip. A few more ingredients for our dip, some sour cream and some hot sauce, and the avocado. I'm gonna chop up some parsley and some cilantro. They look kind of similar but they have a different flavor to them. Feel free to keep some of those stems in because they're really tasty, just give these a nice rough chop. One large avocado chopped, and let's do the other one. I love avocado, I love it so much. We put some lime on the chili lime chips, let's add some lime to the dip. Two tablespoons of fresh lime juice, a little hot sauce, I like a lot of hot sauce. This is going to blend everything together.
And then, I'll just add a little bit of salt and that's all she needs. Smells like summer fresh, I mean summer corn avocados. And I want to get this into the fridge for a little while so all the flavors come together. That's so pretty, you know, I can't just put it away without tasting it. Oh my god, it's so good! Nuts and tart from the lime, just the slightest bit of heat, there's so many different flavors like the sweetness from the corn, the creaminess from the avocado, a nice little crunch from the shrimp.
