Peach & Pistachio Crumble Recipe - SORTED

The Amazing Summer Crumble: A Peach and Pistachio Delight

This summer dessert is full of fantastic flavors, featuring poached peaches with floral flavors of elderflower cordial and a really cheat version of a crumble on top with some shortbread biscuits, pistachio, and brown sugar. The perfect combination of flavors and textures comes together to create a truly unique and delicious treat.

To begin, the peaches need to be prepared by cutting them down and around, just twisting off from their skin. This is the best way to ensure that they come off easily and intact. If the peaches are nice and fresh, this process should yield perfect quarters of peach. The skin can then be left on for added texture and flavor.

Next, a poaching liquid needs to be made using elderflower cordial. The same principle applies as with other squash or fruit juices, but in this case, it's specifically designed to pair well with peaches. A glug of the cordial is all that's needed, along with enough water to turn it into a drinkable consistency, rather than a syrup which can be too strong. This will allow for the peaches to cook gently and evenly.

If fresh peaches are available, they should be used in this recipe as they'll provide the best flavor and texture. However, if not, tin peaches can be used instead. They're already partially cooked in tins, making them perfect for this recipe without having to undergo any further cooking time. In either case, the peaches will come up to a gentle simmer once heated.

Once the peaches have finished poaching, it's time to make the crumble topping. This is where things get really simple. Just take some shortbread biscuits and crush them into rough chunks, as desired. The goal here isn't for perfection but rather an effortless approach that saves all the awkward work of rubbing in butter and flour.

Adding a tablespoon or two of brown sugar helps enhance the overall flavor of the crumble while providing a bit of extra sweetness to balance out any tartness from the peaches. Just apply enough melted butter to bind everything together and you're ready for assembly.

Assembling the dessert is quite straightforward, with a focus on simplicity and minimal effort required. The poached peaches should be lined up in their respective quarters, leaving some space between each one for even cooking when they go into the oven later.

To add the crumble topping, there's enough of it to split evenly between two servings, so half can be placed atop each serving before popping them into the oven at 180 degrees Celsius for fifteen minutes.

By this time, the crumble should have turned golden brown and provided a delightful contrast in texture and flavor. Serving the warm crumble with some clotted cream and fresh mint adds an extra layer of sophistication to what might otherwise be a simple summer dessert. But trust us, it's anything but.

Paired with that classic British favorite, clotted cream is perfectly suited for balancing out the sweetness and tartness found within this delightful peach and pistachio crumble. And when served alongside some fresh mint, the combination takes on an unmistakable elegance and sophistication that elevates even the most basic of summer desserts into something truly special.

With its rich flavors, satisfying texture, and simple yet elegant presentation, it's no wonder this summery crumble is sure to become a new favorite in your household.
