Making Egg Fried Rice with Lomi
Now, let's move on to today's recipe: egg fried rice. This will be my second fried rice video, and I'm excited to share it with you. Today's recipe is inspired by Xiaoying Cuisine, who has some amazing recipes and inspiration.
I found the particular recipe for egg fried rice interesting because it separates the eggs in a way that I've never done before. The result is a fried rice dish that is golden in color and looks lovely. Fried rice is an excellent way to use up scraps in your refrigerator, and having old, cold rice makes all the difference. It allows the flavors to meld together beautifully.
To make this recipe, I started by cracking eggs into a bowl and adding a little bit of chicken powder – Knorr Chicken Bouillon – and kosher salt. Then, I mixed everything together with my trusty spatula until it was well combined. Next, I added some oil to a pan and sautéed the onions until they were translucent. This step is crucial in bringing out the natural sweetness of the onions.
Now, let's add the SPAM! These little cubes take a bit longer to cook, so I covered them for about a minute to trap in the steam. The carrots also needed a little extra attention, but once they're soft and tender, it's ready to move on. Finally, I added the green beans or peas, and after a quick stir-fry, everything was cooked.
The final touch is returning the yellow rice to the pan and adding the egg whites. This step might seem simple, but trust me when I say it makes all the difference in creating that perfect golden hue. And voila! My beautiful, sunny fried rice is ready!

just looks lovely.And fried rice is a wonderful way,my favorite way,to use up scraps in your refrigerator.You got a little bit of this.You got a little bit of this.Just add it to your fried rice.You got some old rice.Fried rice is actually bestmade with old, cold rice:it retains its shape while stir frying,rather than turning into a mushy mess.So start to finish,this too should take about 10 minutes --and that includes cooking itand preparing the vegetables.So, let's go ahead and get started.So today's fried rice is gonna containsome leftover onion thatI had in the refrigerator,green beans that I justpicked out of the garden.They are so stinkin' good.I just eat them right off the bush.But we're gonna be usingthese in our fried rice today.And some carrots that I alsopulled out of the gardenI'm gonna be using abouthalf a large-ish onion here.I like to use a largeplate for the ingredients,so as I'm cooking,I can just add eachlittle bit as I go along.Now, I'm gonna do some green beans.You could also use peas.I often like to usefrozen mixed vegetablesthat have corn, carrots,and peas already cut up.And cut up my carrot.If you like, you can peel your carrot.But, to be honest, I often don't.I just can't be bothered.So that's one of the things I really loveabout fried riceis that it's so colorfuland just appetizing.Just because it's so lovely.So I always try to have somecarrots and some kinda green.If you don't have peas or green beans,maybe green onion.But definitely some greenand yellow from the eggsand some carrots.Just liven things upand just make it muchmore inviting to eat.And I'm also gonna use a bit of SPAM,which I have left over.You can use any kind of meat you like,or omit meat.But I'm just...cut these into tiny cubes.SPAM is very salty,so a little goes a long way.You can use any kind ofskillet or saucepan you like.I'm gonna be opting for this one --it's nice and big --so you can see what's going on.I've also got a goodamount of rice to cook too.While my pan's kind of preheating,I'm gonna separate the eggs.I like to use my hands --I know there's so many different gadgetsfor separating eggs --but I don't like cleaning those gadgets.I'd much rather wash my hands.And...I don't know.It's proved by Julia Childand that's good enough for me.Two rice cooker cups of cooked rice.Add my rice.(pan sizzling)Just let it toast up a little bit there.So these beautiful yolks:I'm just gonna breakthose up a little bit.I like to add a littlebit of chicken powder.This is Knorr Chicken Bouillon.And I'm adding about one teaspoon to that.I'm gonna add half a teaspoon of salt.Kosher salt.And now we're gonna addthe beautiful egg yolks.And we're gonna mix that into our rice.(pan sizzling)Look at this.It's so beautiful.(pan sizzling)What kind of plate shall I use?Do I have something to transfer this to?I'm gonna transfer this a pan.Same pan.Little bit of oil.Now we're gonna add our onions.(pan sizzling)This allows the oil to getthat lovely oniony flavor.Our onions are beginningto turn translucent.And next I'm going to add my SPAM.These will actually takethe longest to cook.I like to cover it forabout a minute or soto trap in the steam.And that softens the carrots a little bit.All right, looking good.And finally, green beans.Or peas.Those also take a littlebit of steaming for me.I forgot that when I was making the rice,I was supposed to add the egg white.Well, I'll do that.Vegetables out in a moment.All right, same pan.We're gonna return the yellow rice.And to this, we are goingto add the egg whites all.(pan sizzling)And back go the vegetables.(pan sizzling)I'm using black pepper here.I often use white.But whatever you got.All righty, my lovelies.Here is the bowl, a tiny bowl,of my beautiful golden fried rice.Look at it.So stinking cute!I often eat fried rice with a spoon.And let's give it a go!Itadakimasu!(Emmy humming)So good!Mm!I usually scramble up my eggsand add them to my fried rice,but because we put the yolkand smushed it into the rice,it has a rich....Rich and eggy.But not like scrambled eggy.You know what I mean?It's lovely.But adding the egg this waynot only enhances the flavor,but it gives it a verybeautiful, pleasing color.Love it!And it's inexpensive.It comes together in practically no time.And you use upwhatever little bitsyou've got in your fridge.Mm-hm.Winner!Alrighty my lovelies.There
